The (lighthouse) picture @1:23 is a big giveaway that the land contains huge amounts of oil. It's a nod to the campaign & bonus island.
The tactics used by the person you watched are very common for these bonus island weekly challenges. The idea is to store oil on oneside of the map. Expand the gas & setup a route to pump up the price on the otherside. You can then stack multiple rigs closer to the inc with the improved prices due to the gas. As its so close the horses dont waste time travelling to sell the oil. The zig zag under the rigs is used to transfer the rig effects (drill through rock & or faster pipe drilling speed)

Whilst I appreciate the concept of Deeper Underground I love the simplicity of the base game/the heat is on.
On a rich map like this, the small pockets are a waste of pipes until you have already gotten the large ones. Not that it really mattered, I think you probably could have sold all you pumped and store nothing until towards the end. Otherwise, good game
