Me too. I had to learn from TH-cam in my 20s and didn't understand anything but rapidly became some kind of special cook because I was a "blank slate" so to speak.
He's just a troll. What he's saying doesn't actually work. That's not how you dice an onion. There's a good reason why everyone else in the world cuts an onion the normal correct way. If you don't do the horizontal cuts you're just left with big long bits of onion around the edges. There's also not much of a point taking the tip out like he did instead of cutting it off or even the root for that matter before dicing but some people say the root has dirt on it if you leave it till near the end of the process. Overall pretty bad video with incorrect information.

I worked as a chef and could never understand why other chefs cut their onions parallel to the board - never did it in my life (except when training because chef watched like a hawk LOL). So I'm very glad to see another chef who dices their onions like me. 😀

But it’s not minced, minced is sooo very much finer. This is coarsely chopped fine for soups etc. If you want minced the horizontal slices are necessary otherwise you’ll waste much time achieving it . From an 70 yr old cook who lived in Switzerland half my life cook

I've discovered Chef Jean-Pierre very recently, why didn't I discovered him earlier!? There is not a single video of his where you can not learn tricks or techniques, his cooking videos are some of the most educative and fun I have ever found about cooking, the man is a treasure!
This was the first culinary thing I learned how to do, and I did it because I watched this video so many years ago. Chef Jean-Pierre is everyone's favourite uncle, I think, that teaches us all we need to know.
I remember running around for a whole summer years ago shouting “A GOOD ONION IS A HEAVY ONION!” and it was so fun, discovering this video again just brought me back.
HE'S BACK! this guys the first chef who ever inspired me and taught me basic and advanced cooking technique . He disappeared randomly and I was heart broken , I studied chef's books from a red seal chef in jail when I was a youth offender , then I needed to follow it up in the free world , and I found him . He has the best recipe collection , it's simple but advanced flavour , and his humour and energy is a thrill to be around . I will let you know now Chef , I am 12 years a home cook and because of your inspiration , I cook like a restaurant chef without ever going to school , furthermore , I gave my life to Christ and i have now been 10+ YEARS free from any system or trouble , I just love cooking and I don't even have the appetite for it , but I love to cook for the sake of cooking and making people happy . Thank the LORD for raising up good cooks in this world while it lasts .

I have been struggling for years to dice onions correctly. This was way easier than the addition of the horizontal cuts. I made quick work of dicing a full onion. Thank you for this easy method.
I'm impressed he didn't teared his eyes a bit. I saw once chef Ramsey saying that the root is the last thing to go and by cutting it at start it will release the acidic that will make you cry. I tried Ramsey's method many times and so far I consider the best, even after cutting 4+ onions in a row, no tears. I guess Jean Pierre's method is based on having a really sharped knife since the first thing he does is to remove the root.
Thank you! It is nice to have intelligent comments from you guys! The reason why you cry when you cut an onion is because of the compound in onions, called propanethial-s-oxide. This compound is trapped in the water of the onion inside THE ENTIRE ONION. Cutting the root OR NOT is not going to change a thing. It’s not like it is in a small pouch in the root of the onion and if you cut that pouch you release that chemical. Slicing any part of the onion will release that gas and subsequently contacts the eye. Sulfuric acid is formed at that point and the eye's nerves stimulate tears. I hope this helps with the sceptics. HE'S BACK! this guys the first chef who ever inspired me and taught me basic and advanced cooking technique . He disappeared randomly and I was heart broken , I studied chef's books from a red seal chef in jail when I was a youth offender , then I needed to follow it up in the free world , and I found him . He has the best recipe collection , it's simple but advanced flavour , and his humour and energy is a thrill to be around . I will let you know now Chef , I am 12 years a home cook and because of your inspiration , I cook like a restaurant chef without ever going to school , furthermore , I gave my life to Christ and i have now been 10+ YEARS free from any system or trouble , I just love cooking and I don't even have the appetite for it , but I love to cook for the sake of cooking and making people happy . Thank the LORD for raising up good cooks in this world while it lasts .

I have been struggling for years to dice onions correctly. This was way easier than the addition of the horizontal cuts. I made quick work of dicing a full onion. Thank you for this easy method.
I'm impressed he didn't teared his eyes a bit. I saw once chef Ramsey saying that the root is the last thing to go and by cutting it at start it will release the acidic that will make you cry. I tried Ramsey's method many times and so far I consider the best, even after cutting 4+ onions in a row, no tears. I guess Jean Pierre's method is based on having a really sharped knife since the first thing he does is to remove the root.
Thank you! It is nice to have intelligent comments from you guys! The reason why you cry when you cut an onion is because of the compound in onions, called propanethial-s-oxide. This compound is trapped in the water of the onion inside THE ENTIRE ONION. Cutting the root OR NOT is not going to change a thing. It’s not like it is in a small pouch in the root of the onion and if you cut that pouch you release that chemical. Slicing any part of the onion will release that gas and subsequently contacts the eye. Sulfuric acid is formed at that point and the eye's nerves stimulate tears. I hope this helps with the sceptics. BTW we have a Onion2.o coming out soon!
