  • Recipe - Bias kitchen Curry
    INGREDIENTS
    500g boneless chicken tights
    1 large chopped onion
    6 cloves of brushed garlic
    30g ground cumin
    30g dry ground coriander
    20g smoke paprika
    1 tbsp of fresh chopped ginger
    30g mix curry spices
    350ml double cream - can be lactose free
    350ml coconut cream milk
    1tbsp dark brown sugar
    30g fresh curry leaves - can be dry curry leaves too.
    100g desiccated coconut
    100g chopped fresh coriander
    1tsp salt
    Zest and juice of 2 limes.
    Fresh chiili it's optional.
    HOW TO MAKE IT
    Marinate the chicken over night or for 1 hour before cooking, with lemon juice, salt, cumin, garlic, dry coriander, paprika.
    In a hot pan add the chicken after that has been marinated, fry a bit until golden, pour the ginger, mix curry spices, onions and curry leaves, cook for 5 minutes with the lead off. Add the coconut milk, double cream, dessicated coconut, cook for 10 minutes, until creamy. Before serving add fresh coriander, lime zest and juice. Enjoy with a nice garlic rice and naan bread.
    Curry de Frango da Bia
    INGREDIENTES
    500g sobre coxa de frango desossada e SEM pele
    1 cebola grande picada
    6 dentes de alho amassados
    30g de cominho moído
    30g de coentro seco moído
    20g de páprica defumada
    1 c. de sopa de gengibre fresco picado
    30g de tempero de curry
    350ml creme de leite - pode ser sem lactose
    350ml leite de coco
    1 colher de sopa de açúcar mascavo escuro
    30g de folhas frescas de curry - também podem ser folhas secas de curry.
    100g de coco ralado
    100 g de coentros frescos picados
    1 colher de sal
    Raspas e sumo de 2 limões.
    Pimentas fresco é opcional.
    COMO FAZER ISSO
    Deixe marinar o frango durante a noite ou 1 hora antes de cozinhar, com suco de limão, sal, cominho, alho, coentro seco, páprica.
    Em uma panela bem quente coloque o frango depois de marinado, frite um pouco até dourar, despeje o gengibre, misture os temperos de curry, a cebola e as folhas de curry, cozinhe por 5 minutos sem a tampa. Acrescente o leite de coco, creme de leite, o coco ralado, cozinhe por 10 minutos, até ficar cremoso. Antes de servir junte os coentros frescos, as raspas de lima e o sumo. Aprecie com um bom arroz de alho e pão naan.
