  • Pattoleo are rice wraps steamed in turmeric (haldi)leaves and stuffed with a filling made from grated coconut and jaggery called chun.
    Ingredients -
    For the outer covering
    Boiled rice-2cups (500gms)
    Tumeric (haldi) leaves
    Grated coconut from 1 small coconut
    Jacfruit (ponos-soft variety)- optional
    Salt to taste
    Some water to grind the batter
    For the filling(chun)
    Grated coconut from 2 medium sized coconuts
    Coconut jaggery (dark brown- maddam godd)
    Sugarcane jaggery (orange-Ushim godd)
    Both in equal proportion as per sweetness desired.
    Method -
    Measure 2 cups of boiled rice. Clean and wash the rice. Soak the rice in water for 4 hours.
    Cut some turmeric leaves, wash them thoroughly and wipe them dry.
    Grate 1/2 of a big coconut or 1 small coconut.
    Jackfruit is optional. I have used it as it increases the taste and softness of the pattoleo. Pull out some jackfruit bulbs. De-seed the bulbs and remove the slimy sheath which covers the seed as well.
    For the filling, grate jaggery so that it easily blends with the grated coconut. Mix jaggery and coconut together till it binds well.
    Pattoleo are traditionally steamed in a CHONDOR on firewood. Chondor is a copper cookware with a perforated stand inside. Put water in the chondor. Insert the perforated stand, close the chondor and let the water boil.
    Till the water boils, blend all the ingredients i.e. jackfruit,coconut, salt and rice together in a mixer. Batter should be ground in a thick consistency, so add water accordingly.
    Spread the batter evenly on the turmeric leaves. Spread the chun(filling) on any one side of the leaf, fold the leaf vertically in half and seal the edges.
    Now arrange the pattoleo in the chondor. Close the chondor and steam the pattoleo for 20-30 minutes. Once done, remove the pattoleo from the chondor with the help of a spatula.
    Arrange the pattoleo platter as per your choice... Peel the leaf covering and ENJOY!
