    My mom used to add grated winter red carrots too along with gur, almonds, spices, walnuts which made it unique sweet rice.

    I was looking for a recepie of gur waley chawal and I found kunal's recipe.
    The tips on jagery was very helpful.
    Instead of putting the orange chilka we can grate the orange peel as well.

    It's very yummy and healthy, I used to give this to my kid when she was two year old .. but I made it very simple, and also used to give tur dal and gur puran because gur is healthy and contain iron ,

    I am from Andhra. We called it sweet pongal, Bellam paramaannam. It is special dish in MAKARA SANKRANTHI festival. Bcoz in SANKRANTHI festival time all crops come farmers home. So this MAKARA SANKRANTHI festival also called farmers festival. In Telugu we Called Pashuvula pandaga. We are farmers. We make puja to cows, oxes, and crops in this time.

    Amazing recipe ! I melted Gur in Ghee first , then added dry fruits and other items you suggested and then added some water later , in the same Pan. I boiled rice separately for few minutes before adding them in main Pan !

      Mostly people melt the gur in water so they can strain the impurities out that. In our house my mum used to put sonf. It used to smell very nice.

    Dear Kunal, this dish is made in south too. This is called 'gudaanna' ! Someone in the comments section said that this is made as prasad in puri. This recipe is also mentioned in "Sri Lalitha rahasya sahasranamaavali "
    " Manipurabja nilaya----
    Rakta varna, mamsa nishta,
    Gudaanna preeta manasa "
    In 'manipura chakra ' , she has three faces. She has vajra weapon! She is called 'lakini amba' she is red in colour and based in flesh dhatuvu. She likes rice with jaggery(gudaanna)
    When you said best time to cook jaggery rice is winter, I understand that Gud strengthens flesh dhatu, to keep us warm.
    Thought, I would share this with you.
    It is a pleasure watching you and following your recipes. Thank you.
    Sorry Kunal! You forgot other jaggeries made from palm, dates etc.. In fact palm jaggery is considered better due to it's high fructose content. Also it is environmentally friendly as it grows in water deprived lands. Sugarcane is water intensive crop. And we are running out of water. Try this recipe with date jaggery or palm jaggery! Its heaven in your mouth!

    In Sindhi we call this sweet rice dish 'tayiri' and it's eaten with 'sai bhaji' on Cheti Chand. That's our New Year, celebrated differently in various states. I love how our festivals also connect us through food!

    In bengali payesh recipe, generally we are using juggery which is produced from date juice. It Is known as Nalen gurh. I learnt from my mother to avoid the splitting of milk, use one pinch of baking soda and it really works.

    Im in love with ur recipies..but if i suggest a try tht boil 90% rice thn make jagery syrup as u made with less water thn keep on dum...try!

      Gur aur muri ( puffed rice)khane se headache thik ho jata hain.Shayod eyh acidity ya gas problem ko kom korta hay. Meri khud ki experience hain.

    Better way to perfect the rice, we need to boil rice seperately if using sella rice then boil 100% if basmati then 80%. Melt the gurr seperately and make sure it should not be much water. In seperate pan add desi ghee with cloves, cardamom and other dry fruits... then add the melted jaggery and then add rice. Mix it very well but gently and rice will start absorbing the jaggery. Here if u feel the jaggery mixture is very less then u can add little water and then put the rice on steam. Thats the best way to adjust the rice level. This is the easy way to make rice khila khila as we punjabi dont like sticky rice.

    Wow wonderful innovation. Actually this is made almost all over India. In tamilnadu it is called pongal, in Kerala it is called Ari payasam. In the north it is gur ka chaval. Only some of the ingredients added is different. Gurd is of various types in the south. Normally it is made of sugarcane, but there r some made if coconut tree, and palm tree. The colour is either chocolatebrowm or black. U can also find them in Goa. These two varieties r used for aryurvedic medicines like chavanaparash, Drakasha arisht, Dashamoolarisht, etc.
    Ur cooking is very easy and exemplary. U make difficult things so easy with a mixture of authentic as well as modern. Thanks a lot.

    We have tried many of your recipes and they are awesome. However, while preparing gur ke chawal we found that it was quite difficult cooking rice in sweet water. We ultimately had to use cooker whistle. Would be great to have your advice. Thanks

    Sweet rice is a dish served with alu ki sabzi and poori for puja and tevar this is an awesome combination. Sweet rice is also made as Prasad for Mandir or Puja.

    I tried this gur ke chawal many times before but this time it turned out so delicious as I followed the same recipe. The orange flavour makes it different (in a good way) from the traditional recipe.

    यह मैं पचास साल पहले की बात कर रहा जब हम पंजाब के एक गाँव में रहते थे, वहाँ शादी विवाह में खाना बनाने का जुम्मा, गाँव के नाई का होता था, जिसको अदब से राजा भी कहा जाता था ।
    तब लोग वहाँ गुरुवार को गुड के चावल मुसलमान पीरों की मज़ारों पर मन्नत के तौर पे झड़ाते थे । तो हमारे यहाँ एक बावा सिंह नाम का राजा भाव कुक होता था, वो गुड के चावल बनाता था और शर्त के तौर पे कहता था, कि उसके बने हुए चावलों को मुट्ठी भर कर दूर फेंको अगर एक एक अलग अलग न बिखरे तो मैं सजा लेने को त्यार । यहाँ मैंने नेट के ऊपर बहुत सी recipe देखी है, एक की भी क्वालिटी वैसी नहीं । 🙏🙏 Thanks

    We have a twin dish of Gur ke chawal here in Uttar Pradesh called Rasiyao with the difference that its a bit more watery and sometimes sugercane juice is used in its making instead of Gud Water.
