      As a Polish who loves Korean food I freaking love that fusion. Both nations share their love for fermented foods but polish cuisine is much milder, because traditional recipes don't have any spicy peppers in them, just black pepper.

    Doesnt surprise me that Kimchi works well with pierogi, considering that cabbage is an ingredient not seldom used in Pierogi, Vareniki and similar Slavic dumplings of eastern Europe.

      I mean kimchi is basically just spicy sauerkraut. Come to think of it there's surprisingly a lot of similarity between East Asian (particularly North China) and Eastern European cuisine.

    There’s always a charm with the beginning of the Kendall episodes where Andrew stands there like he’s the annoyed uncle who is asked for his opinion about something at a family gathering. There’s an unfiltered disorganized energy from him that always amuses me 😂

    Probably the water came from kimchi. Kimchi contains water inside. And as a Korean, the combination of cheese and kimchi is not strange at all. We often use cheese for the many foods by kimchi. 😂

      Could be both because any recipe I've seen using cottage cheese needs to be drained before use cause many people use it as ricotta or cream cheese replacement.

    Kendall Combines is definitely my favorite segment in the Babish Culinary Universe. She has a calming personality which balances the jolly energy Andrew brings and she is diligent and delightful as a food creator. Also very cute but that is obvious. Thank you for giving us more of her content. Cozy corner!

    These episodes are always a joy to watch. The creativity behind combining the two ingredients is a great idea on its own, and Kendall brings that Binging w/ Babish-like energy with a bit of the silly Botched energy too. These are definitely one of my favorite shows on the channel.

    I'm with Kendall on the cottage cheese. That's a combination I'd eat. My usual version is cucumber dill cottage cheese and red wine vinegar.

    It's always nice to see some more recipes with kimchi, and I think that last recipe is worth revisiting. I wonder if the liquid mostly came from the kimchi or the cottage cheese? (I'm not sure if the latter was drained and squeezed)

      @@Hey_its_nathan89 ooh yeah, I've been studying Korean, so basically what they said is that in Korea, there is this food called ‘김피탕’ (kimpitang) that combines kimchi, pizza, and sweet & sour pork, so the combination of an American dish that has cheese in it, (which is mac and cheese), and kimchi isn't that strange since in Korea the combo of cheese and kimchi is common.

    Before watching, in some variant pierogies are filled or accompanied with sauerkraut, which is also a cabbage-based ferment. So it would be a very solid combo to use kimchi to add some spice

    YAY! Love Kendall Combines - so glad we got another one. Honestly, I love the idea of straight kimchi and cottage cheese. Kimchi mac and cheese is certainly something I'll be making in the future - just probably not with cottage cheese! Gonna share the pirogi recipe with some polish friends, see what they think.

    I love eating Cottage cheese plain. Fruit pairs well with Cottage Cheese too, but I have to agree with Andrew's reaction to Kendall liking Cottage Cheese and Salt & Vinegar chips together.

      Hawaiian casserole.
      Get cottage cheese, processed cheese, pasta, spam, and crushed pineapple. Throw it in a food processor/blender, then mix it in your casserole dish with the pasta and bake it.

    Its really a testament to Kendall's skill that every one of her ideas for this insane combination of ingredients immediately makes sense.
    Like Ive eaten (and served, in a restaurant) pierogis with kimchi as a side, so why not just put the kimchi inside, right?

    When i have cottage cheese on its own, I tend to go sweet instead of salty and mix it with fresh fruit instead of adding salt.
    Although I’ve definitely used it in savoury recipes, like as a replacement for ricotta in lasagna, etc.

    Dont give up on the kimchi mac and cheese! We have made it on several occaisions and it is delicious. You gotta go with a cooked sauce tho, and make sure you get allt the liquid out of your kimchi - cooking it out was a great move, makes me think it was the sauce that was the culprit...
    Cant wait to try the peirogies! They looked amaze-balls!

      kimchi fried rice topped with melted mozzarella cheese is just wonderful...you must try it.
      And not to forget scraping up the slightly burnt fried rice in the bottom of the pan. Is is known as a delicacy in Korea. Plz must try..

    Ah, this reminds me of the time I had a friend from high school over for dinner. He is of Korean background and I'm of Polish background. We had bigos, potatoes, and mizeria for dinner. Buddy packed it away, two plates. As far apart as our countries may be, food can unite almost anyone.

    I recently did a Mac and cheese like that and I also added extra liquid because things weren't covered and I think that was the mistake. Because the foil cover helps capture water and it was just enough liquid to hydrate the pasta but I didn't think it would be.

    Ok, simple question, what is it with americans and adding butter to pierogi dough? This is the second time that Babish's channel featured this type of dough which is different form the traditional one which consists of water, flour and optionally an egg. (BTW, Pierogi are plural for Pieróg, Pierogis are a double plural!) Still kimchi and cottage cheese filling is an interesting combination. (Reluctantly) Cheers from Poland

    I already know this will work. I make a super budget friendly cottage cheese bowl with kimchi, imitation crab, and sesame seeds. Sometimes I'll use smoked salmon and avocado, but they're not as budget friendly.

    I think that you could whip the cottage cheese, then toss some drained kimchi (really squeeze out the moisture) with the cheese and make a vegetarian crab Rangoon with it, then use the drippings of the kimchi to make a dipping sauce

    Pierogi dough is flour and warm water. Plus, the dough should be rolled co out thinner.
    The sauce in the mac and cheese broke because she poured milk into it. Kimchi is very sour and it curdled the milk thus the water on the bottom of the pan.

    for the mac and cheese likely what happened is the acidity of the kimchi (from the fermentation) curdled the milk and basically split it between the water and milk particles. (to see it happen add a tsp of lemon or vinegar to 100ml of milk)

    I'm from Poland and I love this concept very much. We in Poland we are too much attached to tradition.
