    This easy chiken stir fry recipe is loaded with fresh veggies and chiken.This healthy recipe takes 20 minutes to make and will wow your family with its amazing flavour!
    Here’s a simple recipe to prepare it:

    Measurements are using scales (g).tablespoons (Tbsp), and teaspoons (tsp)(not measuring spoons)

    Ingredients:
    Chicken Marination:
    Few drops of oil
    2 to 3 garlic cloves
    6 dry red chillies
    1Tbsp coriander seed
    1 tomato slices
    1 tsp salt
    300 g boneless chicken
    1/2 tsp cumin seed( coarsely grinned)
    Stir-Fry
    2 Tbsp oil
    2 carrots
    1 potato
    1/4 cup broccoli
    1/2 onion
    1/2 green capsicum
    Garnishing:
    Fresh coriander
    Mint leaves
    Lemon slice
    Green onion
    Directions:
    Heat oil in a skillet over medium heat.Add garlic,red chillies and coriander seed.Stir fry for 2 to 3 minutes over low medium heat.
    Place tomatoes slice and cook until soften both sides.
    Remove tomatoes slice and let it cool.
    Grind garlic,corriander and red chilli to make paste
    Remove tomatoes skin and add in garlic paste to make fine paste.
    In a small bowl add chicken pieces and paste ,Season with salt mix well and rest for 15 minutes.
    Heat oil in another skillet over medium heat.
    Add chicken and cook for 5 minute from one side , change side and cook another 5 minute .
    Add the harder vegetables first like carrot, potato, broccoli .Stir fry for 5 to 7 minutes .
    Cover and cook until tender.
    Add onion and capsicum at the end and stir well to coat all spices thoroughly.
    Garnish with coriander leaves,mint leaves, lemon slice and green onion.
    Serve hot with rice, quinoa or low carbs.

    7. If you like thicker sauce add corn flour slurry at the end of cooking.
