House Special Chicken Chow Mein (Cantonese Chow Mein) Chinese Wok Stir Fry

  • House Special Chicken Chow Mein is a delicious and simple recipe. Learn how to stir fry fresh chow mein noodles, to make them nice and crispy. You can use any kind of chicken for this delicious stir fry noodle dish. Recipe is below:

    HOUSE SPECIAL CHICKEN CHOW MEIN
    It's called house special chow mein because you can put whatever ingredients you want to. Your family and friends will be impressed when you serve this House Special Chicken Chow Mein. Be sure to make extras because everyone will go for second helpings.
    1 lb. (454 gr) fresh chow mein noodles
    1 tablespoon sliced ginger
    1/2 cup sliced onions
    1/2 cup sliced red pepper
    1/2 cup sliced green pepper
    3 cups Shanghai bok choy or other vegetables
    1 1/2 cups cooked chicken or other chicken
    1/2 teaspoon salt
    1 teaspoon sesame oil
    1 cup water
    1 to 2 tablespoon light soy sauce
    1 to 2 tablespoon Chinese oyster sauce
    1 tablespoon cornstarch in 1/3 cup water
    Boil the chow mein noodles 30 to 60 seconds. Rinse noodles in cold water.
    Preheat a wok at medium heat. Put 3 to 4 tablespoons cooking oil in wok. Stir fry noodles to desired crispness. Put noodles onto a plate.
    To stir fry toppings, preheat a wok at medium heat. Add 3 tablespoons cooking oil. Add ginger and onions. Briefly stir fry. Add salt and sesame oil. Add red and green peppers. Add Chinese veggies. Stir fry for a minute or two. Add water and do final stir fry. Add cornstarch solution to thicken sauce. Add cooked chicken and mix in. Pour topping over noodles. Enjoy!

      Yes, you should get a wok. A carbon steel wok adds a lot of flavor to stir fry recipes. Also gives food the "wok hei", the sear flavor. Thanks for viewing my video on House Special Chow Mein.

    This looks yummy as usual. I did not know I could buy fresh noodles. I imagine they taste much better than the dried. Just a quick question about the use of cornstarch. Does the liquid thicken while in the wok or does it thicken after you plated the meal?

      I guess if you grew up eating fresh noodles first, you would probably prefer eating fresh noodles compared to the dry kind. For me, I like both, but my earliest memories was eating the dry kind, particularly the "Farkay" brand of noodles. The liquid will thicken right away when the cornstarch solution is stirred in. In some of my other videos, I do go into more detail. You keep stirring more of the cornstarch solution until the sauce reaches the right consistency. On the other hand, if you put in too much cornstarch solution, it becomes too thick. If that happens, gradually add water until the sauce thins out to the desired texture.     Thank you for the recipe. I tried this and it was good but somehow it lacked the flavor unique to chinese food. I believe it may be due to the oil that Im using(refined oil)? Any suggestions sir?

      It might be missing MSG. A lot of Chinese restaurants use MSG for added flavor. Instead of adding water for the sauce, add chicken stock. If you don't have chicken stock, use boiling with a teaspoon to a tablespoon of chicken base or chicken bouillon. Some chicken base and chicken bouillon do have MSG.
      Also cook the toppings at high heat to get the wok sear call "wok hei"
