This was the first recipe I made , and it is the best noodle recipe I have ever made , Mr Lau knowledge and experience is spot on , I followed his direction for cooking noodles and they came out perfect , I love noodle dishes but everytime I tried to make them at home they never came out as good as I have at restaurant , thank you Mr Lau , I now have the method , delicious

I find watching daddy lau very therapeutic. I had to cut off all ties with my family and watching daddy lau is probably the only way I have to keep in touch with my roots. Thank you for this.
Both of my parents were very angry, harsh, and punitive, and mealtimes were always especially scary/unpleasant for us kids. 40 years later, watching this family does something to me deep inside... the best way I can describe it is "cleansing the hurt from my heart." I am filled with gratitude. There's a strange peace for someone like me, a peace that comes from seeing with my own eyes that _happy families are real._

I had this dish in St Thomas island and loved it. I cannot find it here in restaurants. I had tried to make it once. I know now with the wrong noodle. Using my wok it became a sticky greasy disaster. I will to do this again with the help you have provided. I think this would be a huge success in America. Thank you,

Nothings better than Hong Kong style chow mein 🥰. Cantonese from Guangzhou to Los Angeles since the late 1800’s. My grandmother raised us eating nothing but Cantonese dishes. Love it, love it, love it 🥰.
Thank you for this recipe. I've always wanted to try making this at home (it was one of my favorites when we went out to eat when I was young, and I always ate too much of it), and this way is very practical. I also will say that I love that I don't have to use the subtitles, as I often have to when Mandarin is spoken, which I never learned. Born and raised in the US, with family members speaking either Cantonese or Toishan, and even though I'm far from being fluent these days because I don't practice enough, it's nice to be able to be able to just sit and listen without reading the screen.
Great channel! Thanks to your Dad for showing how to do home cooking with less oil than the restaurant style. Even wok cooking with a home stove's BTU output is very different than at a restaurant kitchen. Love seeing him, a professional chef, use regular home kitchen stuff!

This is one of my favorite channel to learn Chinese cooking. I find it interesting that steamed noodles don't stick to the pan. I must try and see. Thank you for your expertise.
This is my favourite noodles . I used to go to a Hong Kong restaurant for lunch when I was a student ,and nearly everyday ordered this style cooking of noodles. Ingredients wise, the only difference is that they added tofu also. I have started cooking it at home after moving away. I went back years later but they were shut down. I will follow this recipe as it seems better than the one I am using. Thank you.
As an Australian Asian born to Cantonese parents, it’s warming to see you preserve these recipes. I grew up working in my parent’s restaurants. I appreciate their hard work and dedication more now than when I was in my early to late teens.
FYI: It should be noted that smoke point does not correlate with the point at which oil breaks down. For example, olive oil is one of the most stable oils but has a low smoke point, so in fact you can cook with it at high heats.
You probably know this already, but I'll point it out anyway. This dish is very traditional for birthdays. Noodles are served because long noodles represent a long life and in this dish, unlike soup noodles, can be shared so that if someone doesn't like noodles, they can just eat a small portion preserving the tradition but not having to eat a lot of stuff that they don't like. When I make it for myself, I cut the noodles so that I can eat it easier, but cutting it is a no no for a birthday celebration. I hope you enjoy it. Happy birthday to your dad!

I can't describe how lucky your kid is growing up having great food and love from grandparents. That's all a kid needs. Not money or gifts or a big house. I saw my wife growing up the same ( we were friends from childhood). Her father used to work in Chinese restaurant. She ended up hating eating outside cause her father's cooking was so good. And now we had to move to her house because of Covid, my kids are having the same food and they enjoy eating so much. Sometime, happiness can be so simple.
I was trying to figure out how to prep the noodles for frying. Thank you Chef Lau for the little kitchen secrets for perfectly crisp noodles. I think I will also keep the noodle pancake warm in the oven or air fryer while I’m preparing the vegetable/meat topping. Great to know this classic restaurant dish can be prepared successfully at home with less oil, but a little more time.
Just got the wok and hot plate that Daddy Lau uses from the links in the description, and cooked a meal of steamed noodles with a stir fried pork and veg combo. The Cook's Standard wok is worth every penny! Also your father has really bloomed into a full blown cooking show host, watching him come into his groove has been really entertaining!

Perhaps they did not like the recomendation to use refined oils, which studies have shown to be worse for us than their unrefined counterparts.

Steaming the noodles helps gelatinize the outer layer of starch which can make them less sticky.

I appreciate their hard work and dedication more now than when I was in my early to late teens.
This dish is my top three favorite when eating out at real Chinese restaurants. The other two are beef Hor Fun and orange beef.
FYI: It should be noted that smoke point does not correlate with the point at which oil breaks down. For example, olive oil is one of the most stable oils but has a low smoke point, so in fact you can cook with it at high heats.

You probably know this already, but I'll point it out anyway. This dish is very traditional for birthdays. Noodles are served because long noodles represent a long life and in this dish, unlike soup noodles, can be shared so that if someone doesn't like noodles, they can just eat a small portion preserving the tradition but not having to eat a lot of stuff that they don't like. When I make it for myself, I cut the noodles so that I can eat it easier, but cutting it is a no no for a birthday celebration. I hope you enjoy it. Happy birthday to your dad!

I can't describe how lucky your kid is growing up having great food and love from grandparents. That's all a kid needs. Not money or gifts or a big house. I saw my wife growing up the same ( we were friends from childhood). Her father used to work in Chinese restaurant. She ended up hating eating outside cause her father's cooking was so good. And now we had to move to her house because of Covid, my kids are having the same food and they enjoy eating so much. Sometime, happiness can be so simple.

I was trying to figure out how to prep the noodles for frying. Thank you Chef Lau for the little kitchen secrets for perfectly crisp noodles. I think I will also keep the noodle pancake warm in the oven or air fryer while I’m preparing the vegetable/meat topping. Great to know this classic restaurant dish can be prepared successfully at home with less oil, but a little more time.

Just got the wok and hot plate that Daddy Lau uses from the links in the description, and cooked a meal of steamed noodles with a stir fried pork and veg combo. The Cook's Standard wok is worth every penny!
Also your father has really bloomed into a full blown cooking show host, watching him come into his groove has been really entertaining!
