EASY CARROT CAKE ROLL

  • Ingredients:
    1 Box Carrot Cake
    1 Bar or 5.3 Oz (150 Grs.) White Chocolate
    ½ Bar or 3.2 Oz. (90 Grs.) Butter
    Aluminum Foil
    For the filling:
    2 Bars or 13.4 Oz. (380 Grs.) Cream Cheese
    1 Stick or 3.2 Oz. (90 Grs.) Butter
    8 Tbsp. Icing Sugar
    1 Tbsp. Vanilla Essence
    3.5 Oz. (100 Grs.) Chopped Walnuts
    Procedure
    For the carrot cake, follow the manufacturer's instructions, once baked, thwart with your hands in a bowl and reserve.
    Cut the white chocolate into small pieces, place in a bowl and melt in the microwave, giving 10 to 10 seconds until the chocolate is completely melted.
    For the butter, do the same, melt in the microwave and mix with the chocolate.
    Pour the mixture over the cake and mix perfectly until you get a well-integrated dough.
    Place a sheet of aluminum foil on the table, take a small portion of the cake with your hands, press and spread on the aluminum foil, leave a tab (2 fingers) on the edges of the sheet, repeat the procedure joining the dough without leaving spaces until finished.
    With a mixer, mix the cheese with the butter, both at room temperature, then add the icing sugar and finally the vanilla essence.
    With a spatula spread the filling over the cake, sprinkle with the walnut and with the help of the aluminum foil roll and close the ends.
    Refrigerate for 2 hours or until the roll is firm.
    Once ready, remove the aluminum and cut into slices.
    CARROT CAKE
    Ingredients:
    2 ¾ Cups Sifted Flour
    2 tsp. Baking Powder
    1 tsp. Salt
    1 tsp. Ground Cinnamon
    1 ½ Cups. Sugar
    1 Cup Cooking Oil
    2 tsp. Vanilla Essence
    2 Pcs. Eggs
    2 Cups Grated Carrots
    ½ Cup Raisins
    ½ Cup Walnuts
    Frosting (Optional)
    1 Bar or 6.7 Oz. (190 Grs.) Cream Cheese
    2 ½ Cups Icing Sugar
    1 tsp. Vanilla Essence
    Procedure:
    Heat the oven to 350 ºF (180ºC).
    Grease and flour a mold or large baking dish.
    In a medium bowl, combine the sifted flour, baking powder, salt, and cinnamon.
    In a large bowl, combine the sugar, oil, vanilla, eggs then beat together.
    Add the flour mixture and stir in.
    Add the grated carrots, raisins and walnuts and stir.
    Put everything in the mold and bake for about an hour.
    In addition, in a processor, mix the glaze ingredients until obtaining a creamy and smooth consistency. It is spread on the cold cake.
