Man, I worked with pizza with a Calabrian and a Napolitan guy. The style and preparation of the dough in this video reminds me pretty well my caro amico Francesco (Napolitan). The Calabrese compa was Domenico. Usually made dough with olive oil too, that results in a dough with a litle bit yellow and more resistant to make the "air maneuver". And talking abouts "air maneuver" this guy combines the Schiaffo con il giro libero. Needs a quite skill and experience for that. Even Francesco didn't effort to make something like that.

it's not Neapolitan pizza? No use of whole hand crushed tomatoes, flattened the crust of the pizza, mozzarella cheese was not drained of moisture, sad amount of basil being used. Good pizza but it's not legit Neapolitan. Doesn't even look like he used high protein 00 flour which is a must.
