My sister used to make ribbon meatloaf - instead of a cheese layer she used stuffing (from box mix), though a layer of cheese would be a plus😊. You can also make this as a canned salmon loaf. I think that my sister got this recipe from the Good Housekeeping cookbook that my mother received as a gift when she married in 1956! The book contains recipes called Susan's... or Susie's....? Different times🙃.
Store bought shredded cheese is often coated in cornstarch or something similar to stop it from clumping up, and that coating stops the pieces mixing properly while it's melting 🙂 I love meatloaf and this looks really good, I'd like to try it soon.
That booklet was probably designed to make the housewife feel like, by rationing, she was contributing to the war effort. Keeping morale up was a huge part of all the written materials from that time period and many were written in a very light-hearted way.
I was so excited to see the Betty Crocker booklet. It’s one of my favorite cook books! The honey glazed carrots are now a dish I have to make every holiday.
