I have maybe the same problem (using iPhone)
1) When I start typing a new mail I do not see my signature, but the mail has the signature
2) If I'm answering a mail, my signature goes to the end of the mails chain, not next to my answer

As far as I know, that isn't possible. You'd have to send from the desktop version of Gmail to do something like this.

Can't do links in your mobile email signature. Need to set that up from the desktop version of Gmail... And even then, your links will only work when sending emails from your computer.

Until I saw your video, I assumed that when I went from running my air conditioning business from desktop pc to mobile phone communication, that the original signature just carried on..
