Wagyu Bavette Steak With Chimichurri Sauce Grilled On The Weber Kettle

  • For an incredible meal I grilled up a 3 pound Wagyu Bavette Steak on the Weber Kettle using the Malory Cast Iron Grill Grate, and finished it off with a homemade Chimichurri Sauce.

    Chimichurri Sauce Ingredients
    ½ cup Finely Chopped Flat Leaf Parsley
    ½ cup Finely Chopped Cilantro
    ½ cup Finely Chopped Red Onion
    2 TBSP Minced Garlic
    1 tsp Kosher Salt
    1 tsp Dried Oregano

    Great cook Ry. I order a lot of my Prime meat from Nashville and they have tried to get me to take a bavette. Until now I wasn't really interested. A Steak that is cut with the grain??? You just proved them right. Nice steak cook and a great outcome. I already have that sauce wrote down and really like it. Keep the great vids coming.

    I use lump hickory and I throw the steak directly on the coals. A few minutes each side, depending on the thickness. Then wrap it tight in a couple of layers of foil and let it finish cooking in its own heat for 15 minutes.

    Hello as a recent subscriber and someone who enjoys your videos. I have some technique related questions. Some cooks take the meat out of the refrigerator for an hour or so to let it get to room temperature before cooking. You ski[ this step why do you think it's not necessary? In addition some cooks take their meat off the heat "early" so as to let the meat coast "up' to the desired temp as it rests.

      Generally, I've never noticed any real benefit to letting a big hunk of meat come up to room temp. I'm not sure it hurts anything, but since I don't see any difference it's just not something I do. As for letting cuts rest, the ones that I let rest (brisket, chuck roast, pork butt) for longer periods are already at their desired level of temperature and tenderness. letting them rest only enhances the tenderness and lets the juices stabilize within. Smaller cuts don't have the thermal mass (size) to have significant carryover heat, so I usually let those rest 20-30 minutes max :)

    Ry, looks beautiful, what grade is it. I order mine from Allen Brothers or Wagyu Shop A5 rib-eye. Extremely expensive, order only twice a year.
