    Ingredients
    Mutton -1 kg
    For Cooking mutton
    Small onion - 10
    Ginger garlic paste -1tsp
    Salt -
    Turmeric powder -1 /4tsp
    Chilli Powder -1/2tsp
    Meat Masala -2 tsp
    Curry Leaves -
    Coconut oil -1tsp
    For the meat masala
    Whole Coriander -11/2 tsp
    Fennel seeds -1/2tsp
    Cumin seeds -1/2tsp
    Cloves -2
    Cinnamon -1 small piece
    Pepper - 3/4 tsp
    For the Masala
    Oil -4tbsp
    Big onion -3
    Small onion -10
    Ginger -1 small piece
    Garlic -6
    Green chilli -6
    Curry leaves
    Turmeric Powder -1/4tsp
    Chilli Powder -1 1/4tsp
    Kashmiri chilli Powder -2tsp
    Coriander powder -11/2tsp
    Meat Masala -1 1/2 tsp
    Crushed Pepper -1tsp
    For Seasoning
    Small onion -10
    Oil -
    Curry leaves -
    Method
    Clean and wash the mutton and then marinating it in vinegar and salt. Wash off the vinegar and salt and keep the mutton pieces (with bone pieces are preferred as it brings more taste to the dish) aside. In a deep bottomed cooker sauté around 10-15 shallots with few coconut slices. In a bowl add meat masala/garam masala, turmeric, chilli powder and ginger garlic paste, Salt, curry leaves and coconut oil. Then mix this masala and marinate the mutton pieces for min 20 minutes. You need to keep it in on medium flame for 2 whistles with some water.
    For making the masala take a deep bottomed pan and add oil. After the oil heats up add whole red chilli, garlic slices, ginger and green chillies. stir well on medium heat. Add Salt. Now add the onion. Add some fennel seeds powder. Mix well. If you have more shallots add that well as. Add some pepper. Sauté till the onion turn into golden. On low flame add turmeric , Kashmiri chilli powder and Chilli powder and coriander powder. Continue on low flame. Add some meat masala. Sauté in medium flame and then add tomatoes. Mix well . Then cook with the lid closed. Add the slow cooked mutton pieces to the masala. Add some hot water. Cook for 10 mins with the lid closed. Check spices ,adjust accordingly.
    Finally add the roasted fennel seeds powder, meat masala, pepper powder , green chilly small and curry leaves. Adjust your gravy according to your preference.
    Finally (optional) you can season this dish with fried shallots.
