Hi Sandra! MSG is monosodium glutamate, a flavor enhancer. It's the key ingredient in most if not all my recipes that gives it that savory umami taste that I like... but it's an ingredient that is totally optional and you can omit from the recipe if you don't use MSG in your cooking. Thanks for watching! If you don't use the Nam Powder Seasoning, you can make it traditionally with some cooked Jasmine rice (helps pickled/ferment). The ingredients in the Nam Powder is... acidity regulator: E575, glucose, dextrose, salt, emulsifiers: E451, E452, flavour.

Hi Anita! If you don't want to use the Lobo powder , you can make it the traditional way by adding cooked Jasmine rice, garlic, and salt.
