Rock Slide was an even bigger strike against pokemon like Volcarona and Moltres in doubles since generations 6 and 7 buffed Defog. They're still otherwise excellent defensive typings, if you can stomach the rock weakness.
In a similar vein, for your consideration; "Defensive Pokémon that are surprisingly good offensively" and/or vice verse "Offensive Pokemon that are surprisingly good defensively."
By which I mean Pokemon who were clearly designed for tanking and stalling based on type, ability, movepool etc but having a shockingly consistent option by some means (like Mudsdale clearly being designed to tank but being turned into a monster with Stamina boosted Body Presses), or likewise Pokemon who were clearly designed to blast through foes as sweepers or wallbreakers but through some means have ways to possess astonishing survivability. Not just "good in either direction", I mean clearly designed as a hammer and through some means it also makes a pretty good screwdriver.
Wasn't AV to apex pretty solid in early SC singles? And the most notorious one of those is probably thundurus incarnate in gen 5, everyone used it offensively until people realized prankster thunder wave and swagger was busted, and it became the most nerfed mon in history
For singles the list would probably include Great Tusk and Gliscor. Tusk can be used on everything but the most all out Hyper Offense and Stall teams for its spin capabilities. Gliscor is used on basically every archetype either as a pivot (even offense needs switchins/hit takers) or swords dance sweeper.
Singles is a bit weird. Nearly every good pokemon needs to thrive both offensively and defensively to perform consistently. Stall without a win condition is generally either inconsistent or about to get Chansey banned. Offense without a backbone rarely wins on the right lead, but sure can lose with the wrong one.
Shoutout to landorus, which no matter the set, it still has both offensive capabilities thanks to its insane natural attack and typing, and defensive capabilities thanks to its defensive typing, ability, natural bulk and pivoting.
Here's a few others that weren't mentioned: Dondozo having unaware protecting it from set up mons while also having the ability to go offensive especially paired with tatsugiri Belly drum users: the main one I'm thinking about is Snorlax. Gluttony plus a HP berry synergizes with belly drum. Snorlax also has the ability to be defensive with thick fat, curse, and amnesia. Iron hands is a more offensive belly drum user but he also has access to fake out, whirlwind, play rough, and drain punch. Finally, I want to mention Magearna. It is a mythical but regardless it has an amazing defensive typing and tons of natural bulk. It has so many great supporting moves like helping hand, after you, swagger, heal bell, trick room, both screens. Pain split can be used offensively and defensively. Heart swap allows her the ability to pass on stat boosts to an ally or stat drops to an enemy. Alternatively, she can be all offensive with specs fleur cannon, thunderbolt, ice beam, etc.
I think tapu fini deserves a mention. It could be a bulky support pokemon or calm mind sweeper. It is by far the most flexible. Ig it's not in sv so...
I know it has since drop on usage, but I think Primarina also fit this role at some point. - Water/Fairy = GOATED both offense and defense, hell I think its the best type combination in the game - Highest Sp. Atk and highest Sp. Def among all starters to boost its STAB typings (unfortunately its physical defense is lowkey bad tho) - Check a lot of mons and good as switch in Even though my favorite starter fell off, at least in Smogon its still in OU
