  • Fried rice is delicious, but if it isn’t prepared right, you could end up in the intensive care unit. Germaine Mobley, 62, says she got violently ill after dining at a buffet. The restaurant, just outside Dallas, denies their food made her sick. "I started having problems breathing and my husband called an ambulance," said Mobley. Mobley said she ended up in the ICU for 8 days with what’s known as “Fried Rice Syndrome.” It can happen if restaurants leave the rice out too long to cool. #InsideEdition

    Fried Rice Syndrome may also be the cause of some cooks not washing or rinsing rice before cooking it. I'm shocked because rice is a staple food of Asian cuisine and as I am Asian, I eat it all the time (everyday to be exact). I have cooked fried rice and I usually let the rice cool in the rice cooker pot itself before using it or saving for the next day in a food container in a fridge (if made too much). I have eaten left over rice and I have eaten rice left for more than a day without getting sick. So I suspect that the chefs aren't washing the rice adequately. It's simple, just rinse the rice in water in a pot twice and drain the water out before cooking it (use newly measured amount of water from tap and not that from washes; I use an index fingernail depth of water to prevent the rice from getting to wet and mushy after cooking)- I don't spray my rice with hand sanitizer cause hand sanitizer contains toxic chemicals and I am a chemist by profession.
    In fact, if you actually collected the water after washing rise and leave it in a bottle for a few days it will become a natural stink bomb and plant fertilizer. So of course rice contains bacteria. I use a pressure rice cooker to my rice instead of the normal rice cooker because it can help sterilize the rice.
    Plus I never eat the fried rice they leave at the food counter in buffets because they leave it out too long. I only eat the ones that they cook fresh in front of you (they do that in my local buffet as well as serving fried rice prepared earlier in the day). I do suggest that if you do see insects such flies landing on food in buffet, do not eat it- this is far too common where I live and flies carry disgusting diseases with them.

      It is not regular food poisoning. Regular food poisoning takes a couple of days for the bacteria to grow in your stomach. This one is different. Bacteria rapidly grow and release toxins before you eat it.
      Storing your rice in the fridge is the safe practice. It is very very common for people to leave cookerd rice on the counter overnight then use it to make friend rice. That's how this happens. Frying the rice doesn't destroy the toxins.

    We do this a lot we keep rice overnight and next morning we fried it and eat it as breakfast the next day. Never had problem like this. Maybe we Asian immune to fried rice syndrome.

      It's because they leave it on the counter and not in the fridge,they just want it to cool down a bit but it doesn't stay fresh very long at room temperature. Also don't put hot rice in a closed tupperware,hope you knew that one already lol

    Here in Philippines, we always use left over rice from last night for fried rice during breakfast, it's usually been out in room temperature for more than 6 hrs. We've been doing that since like forever so idk what the hell is the difference between asian rice and american rice or whatever is the reason for that. 💁

    This reminds me when my mom left the frozen curry to defroze a bit before she reheat on stove. She forgot she left the curry outside for almost 2 hours or so and the next day I had one of the worst stomach pain and diarrhea while being at school. I even broke half of my friend's ruler (her seat was beside me and she basically tried to make me feel good 😂) and some of my pencils. Thankfully the diarrhea only exploded when I managed to get into a toilet stall lol
    Why didnt I try to call my mom and go home? Well i was that kind of student who wont go back home as long as I was not bedridden. _Asian kid_

      Marijuana870 Haha! I'm pretty sure everyone that has ever eaten at taco bell has had "flaming taco bell syndrome" 😂😂😂 I legit got food poisoning from there once... I ate one bite of a taco and was sick as a dog for 3 weeks, hospitalized, terrible cluster migraines, etc. When we talked to them, they were like "ya a couple other people said they got sick too, but we don't think it was our food." INSANITY!!!

    I've literally had rice "cool" in a rice cooker for 2 days opening and scooping out of it from time to time and I never got this symptoms before. And I don't even cook or fry the rice that's been sitting out for days.

      I ate from owner operator and got food poisoning on fried rice. Reported to County Health Dept. Took ACV to neutralize bacteria after two horrible runs.

    I don't know, I've known my wife for 32 years, married for 26 and she's Japanese/Filipina from Kuai. We eat leftover room temp fried rice all the time. NEVER got sick, nor our 3 grown children.. The world get's older, humans get more susceptible to new ailments.

    Cooling the rice is actually quite unnecessary

      The grains separate better and retain their shape better when cooled. If you try to fry it while it's still warm, the individual grains tend to break apart and just kind of clump up.

    I once had Oxygen Syndrome. I breathed in for 0.00001 seconds longer than usual and landed in the hospital. It was very traumatic. Now I breathe in for exactly 1.0 seconds.

    Yeah! Think twice before eating takeout fried rice. Recently, a classmate of mine got severe vomiting shortly after eating from a Chinese establishment during lunch break. Avoid restaurant rice like the plague!

    Good idea to spread the rice on a large plate to cool quicker so no bacteria comes on it and put your greetings together thanks for sharing

    I have made fried rice at home all my life. And usually, I make the rice a day ahead. On the day before I make it, I first cook rice and then let it cool down in the rice cooker before placing a plastic wrap over it and placing it in the fridge over night. And I have never ever had any trouble. My family been eating fried rice for all their life and always made it that way. There is no problem with it. Sometimes we use rice from 2 days ago but rarely.

    My brother and stepdad didn’t put away the rice for a long time and i wasn’t aware of this. So I ate it and it was spoiled. I just now got over the symptoms it gave me even though it happened 3 months ago

      I can tell by touching the rice, it will feel slimy and has a smell. I leave my basmati rice in the cooker for a day or so but I leave lid open for time to cool to the bottom than place a plaper towel over rice before closing lid. Never have issues but fried rice from Pho place has made me sick three times this is how I came upon this video while researching. I quickly took Apple Cider Vinegar to kill the bacteria but still feeling sick and running to toilet

    My parents use to own a Chinese restaurant and when they made fried rice they never let it cook cause my dad said if cooled too long could get people sick and Americans usually don’t use chopsticks and just use spoons

    Wouldn't it make sense to cover the bowl (or plate I should say) with a cover or aluminum foil? And why would you want it to cool? Wouldn't you want to eat it warm?

      No it won't kill you. I eat rice every single day (and make fried rices very frequently) and I do sometimes eat cold left over rice straight from the fridge. I've never fallen sick from eating rice for over two decades. If you put cooked rice in a fridge to cool, it's fine and that what me and a lot of Asians do if we make too much rice in one day. Some chefs claim that if the food is too hot and you leave it in the fridge the food will turn sour after 24 hours. I suspect the chefs haven't done enough rinses or haven't washed it at all because the standard number rinses is at least two rinses for normal sticky rice. They may have cooked it in a pot- this is not safe as the heat won't fully sterilize the pathogens on the rice. I cook my rice in a steam pressure cooker style rice cooker like most of my Asian counterparts do and it guarantees 100% sterilization of the rice as well as the rice being fully cooked. Steam is more better to sterilize things than using hot water.

    6 hours is too long for bacteria growth for food safety, the max is under two hours but the rice can easily cool under 20 minutes before putting in a cooler shortly after and binning it
