Yesterday marked 1 year of us doing things together! Thank you so much for being so awesome and creating a comments section that doesn't suck and is kind and inviting. You guys are the best and we gonna do this shit for years! Happy Valentine's day, Love you all.
If you have a truffle grater like in the video, use it to get really thin parmigiano slices ontop of pasta. With this thing you get them to melt a bit when they come in contact with hot pasta and in your mouth, superior way to top pasta with parmesian compared to just grated normally if you have a grater that can get thin enough.
If someone sends you truffles, they are forever in your heart. That is the coolest, most thoughtful thing you can give a chef. I would die. Mostly because I don't have to pay for the truffles, which can seriously mess with your food cost.
Awwww I love this so much! It looks incredibly, amazingly delicious. As always. But you've taken it over the top. I always love all the thoughtfulness in your recipes and videos...and this one really takes the cake. Truly proud to be a Patreon producer. I believe in what you stand for, and just love watching, on top of it. I can't believe it is also your 1 year anniversary show...oh, you most certainly did need truffles for it. That is major! I can only imagine how much work went into this year. Thank you for featuring truffle, and thank you for the shout out. Means a lot. I am definitely making this dish on Valentine's Day, and I'm not sharing with the llamas. And so many congrats on 1 year and on ABC!
10:28 to 12:05 was EXACTLY what I was looking for in a Risotto lesson that many vids on TH-cam did not go through step by step visually. Gonna try making risotto again using your method and thanks a bunch!
Just discovered this channel and it is fantastic. It takes so much time and effort to plan take all these shots from different angles and then edit them all together on top of the actual cooking process. PLUS you're also talking to the camera in a calm demeanour and showcasing all the wonderful ingredients. Good job!
I went to restaurant Gordon Ramsay in London a while ago with my girlfriend, who is a vegetarian. Her veggie option was a cep and truffle risotto. I only had a forkful but it is still, to this day, the single most delicious thing I've ever tasted.
Steve, I spotted your recipe exactly one year after the upload. I wanted to make something awesome for my girlfriend this Valentines, because whenever we go out to eat we’re always disappointed by the food... side note; how is it possible for trained chefs to dish up poor meals and charge for it? Anyway, I love cooking and have been trying to get the perfect risotto for years. I managed to get all the ingredients except the elusive truffle. Instead, I got truffle and porcini infused oil. I successfully delivered my first ‘restaurant-quality’ meal that I’ve been working towards, and your channel has played a huge part in this. I followed up with homemade Neapolitan style pizza topped with caramelised onions, goats cheese and rocket with a balsamic glaze (because, you know, just can’t get enough of the stuff!). Thank you Steve. You have become my go to resource for learning and inspiration. This is what learning in 2020 should look like. All the best!
Dude, you are by FAR the best channel out there, I watch SEVERAL channels and they are all good, I also have been cooking professionally for over 30 years, you blow us ALL away. Congratulations on your channel brother, your passion and love for what you’re doing really shines thru. 👏👏👏
I made this tonight for my girlfriend and it came out really good, she loved it. I didn’t have truffles but it still was delicious. Thanks so much for the recipes. I’ll be making the carbonara tomorrow. Love what you’re doing.
When I watched this video, I noticed that the camera angles that captures the food looked more seemless!! I'm not sure if I just didn't notice it til now, but I appreciate all the hard work that's put into your vids!
Thank you Stephen! I did not have arborio at home, only a black rice called "forbidden" rice, and shiitake mushrooms; however, followed all the steps, and added parsley at the end instead of the salad, and it was awesome!!! I'll definitely try the full recipe some other time
made it once and quickly became my favorite dish to cook when i have guest at my house:) it’s gorgeous, luxurious and easy to follow!! ALSO SUPER DELICIOUS thank u stephen🥰
Your videos deliver on what you promise in the title, for the amount of technique you show I think youi’re quite moidest but at the same time are very authoritative. In summary, you’re one of my favorites and I just suscribed.
currently on the 6th straight hour of watching your videos today... the love you show towards your cooking, the way you teach and make recipes sound doable, the flexibility you show in your cooking, even just the production quality of your videos... truly inspiring. cannot wait to try more of your recipes!!
Hey, I live close to that farm! Definitely considering that truffle tree! Your videos are really amazing and inspire me to start filming myself! Thank you!
Just made this today (sans truffles) and it was delicious. Really simple, and not as time consuming as everyone always told me. Now that I'm through the fear I can't wait to experiment a bit with combinations.
That is an awesome mushroomy scenario. I have a thing I do in risotto making, and I'm wondering what you think. Since the risotto should be served right away, and since it can be inconvenient to stand over a risotto pot for 25 minutes leading right up to dinner, I do this thing where I start the risotto a little earlier, and then when it's about half way done, I turn it off, put on a lid and let it lie. Then, when the time comes, I start it up again and take it to the finish. It always comes out perfect.
Just a week ago I made something similar for my female friend. It turned out perfect, but I was kinda improvising the whole thing (veg stock made from scratch too). I wish I stumbled on this video earlier, if only to save myself major stress and uncertainty. The way you present the recipes and cooking stages is top notch, no-nonsense and professional. You deserve a place among the heavyweights of the cooking world.
Hey...I just came upon your TH-cam channel and I'm enjoying it very much...I particularly like how you get to the recipe. Italian recipes are amongst my favorite.
OH. WOW. I need, need, NEED to make this! I never thought to add so many different types of mushroom to a mushroom risotto! Don't know why not! Looks DELICIOUS!!!!
The way I express love is through effort (I’ve never had much money for gifts or experiences etc) I love how simple the ingredients are but with attention and dedication, this would easily cost £30-£80 in a high end restaurant
Excellent risotto tutorial! I’ve been doing a very very similar seafood one for years. This would have been perfect to see when I started. Glad to see I have been doing it right
Lovely. I also like putting in a small amount of fried pancetta (not too much where the porky saltiness overpowers the mushroom goodness). Though I've never made it with black truffles! So good!
Almost the same way I make my Mushroom Risotto. Only difference is I use shallots instead of onion...and of course I don't get to use Truffles very often. LOL. Love the Truffle Butter idea to preserve some of it! Awesome stuff!!
This dish looked amazing. Great job brother. Really loved it .. keep up the good work . And good luck on your news Camio! So happy for you. You are killing it
Congrats on the first year of hopefully many. I spend a good portion of my time watching how too videos on how to up my food and presentation game and you are by far the best and most enjoyable to watch. I would easily put you a long with Jamie Oliver and Gordon ramsay as most fun to watch. The thing that makes you stand apart from everyone else is you skill of teaching and your chill and relaxed way of doing it! Hope you never stop!
Love your cooking show and how authentic your Italian recipes are. I wish you had a DOWNLOAD button added for the recipes which are hard to find sometimes. Thanks
I don't comment on a lot of videos, I don't even log into youtube most of the time. But damn, this looks so damn delicious and i love the way you made the whole dish and the video! Really amazing. Good job!
I did everything you said to a T. I felt the mushrooms in the vegetable stock clashed with the white wine. I will probably try chicken stock next time and leave out the dried mushrooms.
Hi! If I may suggest, try a Carnaroli rice to make any risotto. It's brutally superior to the arborio, here in Italy every restaurant uses Carnaroli. It costs more, but it's worth it. Great video!
It’s just not easily available in most stores. That’s the main reason you don’t see me use it. I try to use the things people see in American stores. I really didn’t start the show thinking Europeans would watch. I wanted to change the way Americans ate. So there everything I do, in the back of my mind I know doing and using specific things on purpose may make this come across as approachable while still respecting the dishes

Congrats buddy. Have enjoyed watching your journey
Happy 1 Year man. Just killing it! I really can't wait to see where you and this channel take you next year man its going to be great.
Thanks brotha!

Tried this without the truffle and was amazing. Thanks for sharing, this really changed how I think about making my stock :)

Hey, I live close to that farm! Definitely considering that truffle tree! Your videos are really amazing and inspire me to start filming myself! Thank you!
Amazing, definitely get on those truffles!
These are the little gems in the cooking world of youtube

I find beauty in flowers, like I do all things in nature.
Love you, kid!!! Love your choice of music!!
Just Cooking. No bullshit. My kind of video.
I did everything you said to a T. I felt the mushrooms in the vegetable stock clashed with the white wine. I will probably try chicken stock next time and leave out the dried mushrooms.
