This is my new risotto recipe which was born out of my last two risotto experiences in Italy, one of them was a good experience, the other one was a bad one, but those two experience have now given birth to my new favorite risotto, Risotto with Sausage and peppers.

I swear to god, DO NOT throw away the juice that is released by the peppers after roasting! That stuff is liquid gold. Trust me! No matter how little it is, collect it and let it reduce in a non stick pan until it caramelizes. Then add it to you Pepper sauce or mix it with some cold butter to add to the risotto at the very end or keep in the fridge for later use. It an absolute flavor bomb!

I've yet to make risotto, but I literally just made the red pepper sauce 4 or 5 days ago for the first time in about 9 months. That sauce with I think fusilloni was the last thing I made for my father before he passed - the hospital staff weren't happy with me at the time, but he wasn't allowed much salt at all at the end and it was a rare highlight.

I absolutely love Red pepper sauces and I've found adding sun dried tomatoes into the mix when you blitz it makes an even greater flavour bomb.❤

So I love this method, but my wife can't do spicy, so I made a pasta dish that combined your cavatelli broccoli sauce, with your red pepper Bolognese, which you use for this, but used just green pepper, no heat, instead. And it's actually an amazing sauce on its own.
Red bell peppers aren't spicy tho...
Red bell peppers and green bell peppers are the same pepper, they both have no heat. The only spice in the dish is the optional Calabrian chili.
Yeah, there's no heat in bell peppers dude.

This is a great dish, I love that capsicum sauce, I make it very similar to that with pasta, sometimes vegetarian and sometimes I add prawns, I love the idea of the sausage and prawns maybe … yum

I made this last night and it was a huge hit! excellent recipe but made a few tweaks to my tastes but everyone LOVED the risotto and its a nice change to our 3 typical styles of risotto flavor profiles. TY again Steve!

I'll be making this for a party on Saturday! Thank you! Gonna modify a smidge cause its for pumpkin season so I'll make a pumpkin sauce instead of red bell pepper, but the sausage and more importantly the croutons! That feels like it'll just be a smash.

It's amazing how traditional Italian food is an all day process, so meticulous and perfect.
There are shortcuts! Even Italians in Italy frequently buy their red sauce jarred, and I’m sure there are many others, like buying a jar of whole seeded roasted red bell peppers. Stephen, however, is a very fine chef so he’s cooking like the best chefs would make it in an upscale restaurant! He says he cooks like a grandma, but in truth, his cooking is way more exquisite than grandma.

Sausage, butternut squash, and fresh sage risotto really good! do the butternut in a broiler til perfectly brown stir that in 10 minutes til done with the fresh sage. almost everything else is the same except the pepper sauce. That will be a must try! Awesome looking eats!

Very creative, Stephen! Love roasted red pepper sauce, but never seen it like this with all the cream and sausage. I know it would taste delicious, but I’d have to dial back the cream and use something leaner than sausage (or at least toss the fat, not use it for the onions & peppers.) But it would be a winner on a menu in a nice restaurant!

wondering if this would be good with fried sage? noticed there were no herbs but maybe that was by choice.
You'd be surprised by how many Italians are confused about the risotto concept and mix it up with rice. Especially in the south, where it's not a very traditional dish (less than the north anyway).
It's definitely not a popular dish in Rome. You'll find the best risottos in Milan, Piemonte and Veneto
The first risotto dish I had in Florence, Italy on the vacation I am presently on was definitely just rice. The rice split and was exploded. Ugh
Apparently my grandfather used to cook something similar to this whenever he would get home from work to hold the family over until grandma could cook dinner.

FYI. When in Rome the Roscioli Wine tasting is not to be missed. A minimum of 6 wines with a small plate to match. I'm an early member of the Roscioli Wine Club and have done the tasting many times. The good news is that Roscioli recently opened in NYC. You should check it out and ask if Alessandro and Lindsey are there.

I’ve always hated foods with that “oatmeal” mouth feel but damn does this make me want to finally try a risotto. I know I’m wrong about not liking it but I can’t help it lol
Good risotto is creamy. I want to say pudding but it's not that firmly held together. It slides down when you eat it, it's hard to explain. Oatmeal is kind of a mushy blob. It's a different texture. Risotto is good. The classic is mushroom. But it's all great. It's also easy once you get it down and is versatile. It's a base for so many flavors. Mix and match whatever you want. I've made Chinese chili oil risotto.

Really appreciate that you have a website, but any chance you could make it perform better on mobile? There's a standard format for recipes and your site doesn't use it, causing issues with recipe apps like Samsung food
