HOW I MADE 300 PIECES OF LARGE MEAT PIES FOR A COMPANY | BEST NIGERIAN COMMERCIAL MEAT PIE RECIPE

- Hey People! Quality has always been my watch word irrespective of the quantity. Hence you find items/ingredients you won't normally see in a regular meat pie recipe that's shared on TH-cam. This is why my clients call my pies 'Executive' Meat pies.

Listed below are ingredients used in preparing my large Meat Pie order👇
⭐ PASTRY DOUGH
📍 20kg of Flour
📍 8kg of Margarine
📍 120g of Salt
📍 20 large Eggs
📍 4tbsp of White Vinegar
📍 12 sachets of cold/iced Water (see note)
⭐ SAUCE
📍 4 large Cabbage
📍 1½ paint of carrots (the cut ones)
📍 ½ paint of Irish Potatoes
📍 ₦16,000 worth of Beef (see notes)
📍 ½ bale of Spring Onions
📍 1 derica of dried Kidney beans (see note)
📍 1 derica of dried Green Peas (see note)
📍 ½ paint of Scotch Bonnet (ata rodo)
📍Seasoning cubes
📍Salt
📍Curry
📍Thyme
📍 Black Pepper
📍Ginger & Garlic Powder
⭐ MISCELLANEOUS
📍Cooking Gas : 9kg
📍1½kg extra of Flour for sprinkling on work table and flouring baking tray.
📍1kg extra of Margarine for greasing pan and brushing tops of Meat pies when baked.
📍EGG GLAZE: 8 eggs ➕ 16tbsp of Water (Whisk together)
📍Pastry Glue: 700g of Flour ➕ Water (add water little by little to flour till it forms a watery consistency thick enough to coat the back of your regular eating spoon).

NOTE 👇
⭐For the cold water you might end up not using the 12 sachets. This is because we have different flour brands in the market and each absorbs liquid /water differently.
⭐When buying the beef, I told the seller it's for selling so they had to cut and count. The cutting size they used is the size for ₦100 meat been sold by road side food vendors 😀. I also divided the ₦16,000 into 8, meaning I bought ₦2,000 worth of meat at a time. This way they added more 'jara' 😂.
⭐For the Kidney Beans and Green Peas, I had them soaked overnight. Drained out the water, added fresh water and boiled them.

⭐TBSP: Tablespoon (this is a standard baker's measuring spoon not your normal eating spoon).

After packaging them in an individual sealable branded nylon, I arranged them neatly in a big "Ghana must go" . Those ones that's been sold for ₦1,500. Then I used a cab to convey all treats to the delivery point. Since I still had a huge cake and smallchops packs to deliver too. I hope this helped 🥰

How do I get this kind of branding and packaging
I'm in Lagos, Nigeria. You can always get your nylons from those that sells chinchin nylon or those that produces. While for the logo, you can get that from the printing press. You can either get paper stickers or SAV stickers. SAV stickers are water resistant.

That's an industrial local oven sis. It uses gas although there's an option for charcoal.

What does the vinegar do
Vinegar prevents the dough from getting tough. Professionally, we say it makes the gluten relax which in turn creates flaky pies. Thanks for the support 💖
Why you didn't use baking powder
I don't use BP in my pastry dough for pies. I have a detailed online pastry/every-day snacks class that explains the reasons

Quick question, please. From the video, you mixed the dough in 5 batches, 4 different times to make the 20kg of flour. While mixing, does that mean you divided all the recipe ingredients into fourths or you were just estimating until all the necessary amount of ingredients were used? Did you use baking powder
I don't use baking powder in my meat pie dough. It toughens the dough and it's professionally wrong to add baking powder to pastry doughs.

How did you mince the meat yourself
I grated it with a manual blender. Those ones used by Igbo soup ingredients sellers. I have one I use for mincing and roughly blending of peppers 😀

@@ndanenunaomi895 oh okay. Eggs adds extra fat to the pastry dough. Makes my dough lighter to handle and for that perfect crumbly flaky texture, eggs in pastry dough is one of the things that leads to that.
