How to Make Homemade Pectin From Apples | Full Process

  • Recipe
    1. Need 5 lbs green apples, slightly underripe.
    2. Chop apples into small pieces.
    3. Put chopped apples into a pot large enough to boil without boiling over.
    4. Add 2 cups of water for every lb of apples.
    5. Bring apples to a boil over high heat; reduce heat slightly to a more gentle boil.
    6. Cook until very mushy, approximately 30 minutes.
    7. Remove apples from heat & pour into a strainer or colander lined with cheesecloth or other cloth.
    8. Allow to drain for 4 hours or overnight to extract juice without squeezing the fruit.
    9. Cover while draining.
    10. Measure the juice.
    11. To make liquid pectin, pour juice into a saucepan and bring to a boil over high heat on the stovetop.
    12. Reduce heat to allow the juice to boil gently to reduce by 50%.
    13. Pulp after draining can be composted or discarded.
    14. When juice is reduced by 50%, pour into a jar or other container and refrigerate for up to 6 days, freeze for up to 6 months, or can in jelly jars using USDA approved canning method.
    15. Five lbs of apples should result in 3 cups of pectin.
    16. Use 1 cup of homemade pectin per batch of jelly or jam. Will result in a more soft set jelly or jam than commercial pectin.

    I run the leftover pulp through a food mill, add sugar and cinnamon, cook it overnight on low in the crockpot and make applebutter!

      We never used to hear a peep out of Baby, she was always the shy one. But since she is getting older she "vocalizes" all the time. lol

    Cranberries are high in pectin as well. I never have to add anything when I make cranberry jelly. I haven't ever seen anyone make homemade pectin. I love this

      Hey! Hope all is well with you. I've never used cranberries, I guess because they don't grow around here. I'll have to try cranberry jelly when I have the chance.

      @@knothead35 I guess that's what I'll have to do. I'm moving to southern Virginia and was wondering whether they grow there, but it looks like they grow further north. I'll have to get them from the grocery also. One of my daughters-in-law makes fantastic cranberry sauce for the holidays, usually about 3 different recipes. Yummy!

    i was wondering by chance do you have a video on how to make dry pectin? I'm assuming its shelf life is much greater than liquid form but cant find a single video on it ANYWHERE! please make a dry Pectin video for us please and thank you...

      I'm glad you mentioned this. It's on my list of videos to make. You basically take the liquid pectin and put it through the drying process like I do milk, either using an oven or a dehydrater. I'll make one hopefully within the month. Thanks for reminding me!

    you can feed chickens pigs etc... with the apple leftovers

      Good morning! Yes, if you have farm animals, that's a good use for them and most fruits and vegetables. The person I used to buy free-range eggs from had a produce stand and fed his chickens all the fruits and vegetables that he didn't sell. The eggs were amazing! Thanks for the comment!

      @@myice-creamdreams3421 Thank you. It was actually my sons who got me started making the videos. They encouraged me to record the things I've learned for at least 2 years before I worked up the nerve to do it. Some things that were the norm in my day are becoming lost to future generations.

      Thanks, DK-dx7ei! The pot is a Magnalite 5-quart Dutch oven with the DHC logo that I got at an estate sale back in the 1980s. This particular type of pot with the DHC logo was made from 1969 to 1996 of heavy anodized aluminum with a thick bottom that transfers heat well and cooks beautifully. I have a couple more Magnalite Dutch ovens that you see in some of my other videos and I use them all often.

    I'm very concerned about that aluminium pot you are using. Toxic aluminium leaches into foods cooked in it. Especially with acidic foods like apples, particularly when stirring with a metal spoon. The longer foods cook, the more aluminium they absorb. It is implicated in e.g. the development of Alzheimer's disease.

      Yes, Ruby is correct. Many people moved away from aluminium kitchenware after learning the link between heavy metal overload (especially from aluminium) and dementia, Alzheimer’s, and many other mental diseases.
