    I made Apple Crumble Pie, a combination of caramelized apple and crunchy crumbles. I also made royal milk tea made with rich brewed black tea. Please look forward to my Apple Crumble and Royal Milk Tea tips! 🙂
    [ SABLAGE method ]
    In French the word sablé (sand) is used to describe this type of dough, and the sablage process involves simply mixing flour and sugar together, then blending (or "sanding") in diced, cold butter with your finger tips until a coarse, sandy texture is reached. At that point the dough can be pressed firmly into a pan and baked.
    This time, I made it using the 'sablage' method because I had to make a crunchy and crispy pie.
    🍎 INGREDIENTS 🍎
    ** 23*23*4.5(h) cm fan **
    ◆ APPLE COMPOTE ◆

    5(1170g) Apples
    130g Brown Sugar
    15ml (1TBsp) Lemon Juice
    2.6g (1 tsp) Cinnamon Powder
    40g Unsalted Butter

    ◆ CRUMBLE ◆
    -
    350g Cake Flour
    180g Sugar
    7g (2 tsp) Baking Powder
    -
    150g Unsalted butter
    -
    1 Egg
    20ml Milk
    2.5ml (1/2 tsp) Vanilla Extract
    1g (1 pinch) Salt
    --
    ◆ ROYAL MILK TEA ◆
    -
    300ml Water
    15g (3g*5EA) Black tea bag
    24g (2 TBsp) Sugar
    400ml Milk
    --
    🍎 PROCESS 🍎
    ◆ Apple compote (simmered apple) ◆
    01. Peel the apple and cut it into 1cm or less.
    02. Put apples and brown sugar in a pot and boil over medium heat while stirring with a spatula.
    03. When brown sugar dissolves, add lemon juice and cinnamon powder and boil for at least 10 minutes.
    04. Turn off the fire, add butter, melt it, and let it cool at room temperature.
    ** Store at room temperature while making crumble **
    ◆ Crumble ◆
    01. Put cake flour, sugar, and baking powder in a food processor and blend.
    02. Add cold unsalted butter to the food processor and mix once more.
    03. Separately mix milk, egg, vanilla extract, and salt.
    04. Put the flour mixture in a bowl and mix with the liquid ingredients and then mix
    05. After wrapping, keep refrigerated for 1 hour.

    06. Cut the hardened crumble with a scraper
    07. Spread half of the crumble on the pan and press it tightly.
    08. Spread the apple compote on the crumble.
    09. Put all the remaining crumble on top of the apple.
    11. Bake at 180°C for 50 minutes. (200°C preheat / Unox oven standard)
    12. After cooling in the pan, remove the Teflon sheet.
    ** The shape may break if not completely cooled. **
