    I one hundred percent support more grapes in desserts. Why aren't the there?! A few years ago I developed a grape and ginger tart just because it occurred to me that grapes are underrepresented, lol.

      @@juicysmith38235 Sorry for the half a year late reply. It's been about 2 years since I made it and I never write anything down, but it was a typical pie crust, fully baked. About 8 oz cream cheese, 3 oz of Greek yogurt, about .5 cup sugar to taste (but I might use honey now), about 2 tsp of grated ginger-- all mixed into smooth, and let's say 8 oz of grapes halved on top. I added chopped pecans and a very little bit of candied ginger to garnish, and for texture. There's also a good chance the filling had lemon juice (2 tbs to firm and flavor). A colleague was able to do a copycat the weekend after I shared it with no guidance. It's a very forgiving concept. Here's a link to my IG of it if that helps, dot removed just in case:

      My step mother used to make this delicious plum cake which I turned into a grape cake years later. It's good with green grapes, better with red, and best with a mixture of the two.
      Haven't made it in awhile, I should.

    For added sweetness, try using, when in season, cotton candy grapes. The grapes' flavour was noticeable and a tad more acidic than regular green grapes.

      Grape pies from Naples, New York, are made from concord grapes. They are hugely popular at the Grape festival along with other grape desserts like grape candy apples, grape cookies, grape drinks, and wine.

    With green grapes? Hmm. Ok. One of the best desserts my mom ever made, and she only made in once, was a concord grape pie. It was kinda soupy, but delicious. That was decades ago and I've never forgotten it.

    Tried it. It tastes good, but next time I will be halving the caramel, salt in the base and sugar in the sour creme.. The supercharged grapes are really good and deserve something more sophisticated. The grape marinade is lovely with some ice and sparkling water :D

    Grape pie is def a thing in The Finger Lakes of NY state…. Made like normal pie, just with grapes instead of apples or blueberries…. It’s rather good 🤗

    I think that I would try this recipe with red grapes and possibly use Bacardi instead of brandy.

    I can understand all of it being great, the crust sounds great, the marinated grapes sound amazing, but that much sour cream in a sweet dish?

      Occam's Beatin' Stick. It’s not that much different from using whipped heavy cream or cream cheese- try it in almost any sweet recipe, in terms of flavor it tends to work pretty well. It adds an important acidic element which balances the sweetness and richness, and generally isn’t nearly as noticeable as you might think. It’s actually pretty common in eastern-European baking/desserts for that reason, and trust me, what Alton is asking for isn’t very much.

    So many people asking if you can substitute this for that, or use this or that, yes of course you can, thats actual cooking! Try different stuff out, experiment! Thats the fun! There are no rules and you never know what you may come up with! Have a good day cooking!

      White grape juice, and white grape juice mixed cherry soda pop or Barq's cream soda. There are other substitutes using peach or apricot syrups.

      You could try digestive biscuits for the vanilla wafers ... but subbing for the brandy is a challenge. Maybe just leave it out and expect a different flavor...

      Yes, though some of them contain alcohol, too.
      (The idea is that, since they’re much more concentrated, you can use much less-but some people do not want to use any alcohol at all.)
      You just have to read the labels carefully.
      (Also, I don’t think they taste the same, but my opinion of what you do in your kitchen doesn’t count for much.)

    I’ve thought of a grape pie but not like this. I was gonna do mine so it was a clear pie and had flavor of the grape I was using. Yes I said a clear pie it’s something different but I don’t wanna waste the grapes. 😂

      Do you hate cheesecake?? Sour cream is an amazing ingredient to use in sweet stuff like pies, even if you don't enjoy it, like, on a baked potato.

      @@Kahandran An amazingly disgusting ingredient, I hate sour cream on baked potatoes, no thank you. (Cheesecake is ok, mainly because it's more sugar than anything else. Not my favorite desert though. Also you can substitute heavy whipping cream in place of sour cream in cheesecake.)

      My best cookie recipe ever (double chocolate peanut butter malt cookies) came from a round of munchies when I didn’t have any vanilla on hand and wanted to pack as much flavor into a chocolate chip style cookie as possible. I’ve still gotta tweak some ratios to get the texture perfect, but they hit all of the right flavor notes at just the right intensity

      It requires an overnight step, though. Would only work if he tried it with normal grapes and then refined it to the soaked ones.

      @@marco5030 Well he has that vacuum thing sorry can't remember the actual name. It can reduce marinade time so it wouldn't need a overnight, just probably enough time to do the rest.

    I made this today. Measured everything and followed the recipe exactly. Needs more grapes. Also had to make double the caramel sauce as the first batch not enough to cover. Rather disappointed as I have never had a problem with any of Alton's recipes over the years. 😣

      Think the amount of grapes are a personal preference, and not sure about the caramel. Made it a few times and it seemed to cover the right amount. Did you boil too much water off (too high of a heat) or use a 11x7 dish like Alton did?

      I've shamefully made it twice already. It's seriously amazing. Sweet, creamy a little bit tangy, with that little accent of salt and the crumbly cookie crust. It has quickly become one of my favorite desserts.

      Made it, and sampled it. Verdict: it is good. Mind you, i used a caramel sauce that, once cold, is very much like the coating of a caramel candy apple.
      Other modifications that i made were: lemon juice instead of lime, used himalayan salt, rum and merlot wine mixed together instead of brandy.
      It is not as sweet as I thought it would. My only qualm, if i can call it that, is: what is a turbo charged grape supposed to taste like?
      I will definitely make this pie again.

      You can. It will change the flavor profile a little bit but if you prefer less tang and more richness it is what I'd recommend.

      Brent Willis *less* tang? 🤔 I assume you’ve not tasted Greek style yogurt? 😉Ok, that aside, yes, I concur with the idea. You can substitute sour cream for yogurt in so many recipes. Oh... for that matter you could also substitute with creme fraiche and it would be lovely!

      Sour cream is actually the classic dressing for sweet fruit salads (like Ambrosia), you end up with a hint of the tang, but it mingles with the fruit juices and becomes the ingredient people have the hardest time guessing unless they know how to make a similar dish...

    Made it. Hard to cut caramel topping when plating , WAY too sweet. Far more like a treacley triffle than a "pie." Some may like, but far to sugary for me. Most interesting, tasty thing about it was the the leftover grape brandy-lime-honey maranade liquid!

      thanks - i was conflicted whether to make this since I don't really like cloying desserts and this seemed like a prime example - thought that the sour cream might have reduced the impact somehow - but was clearly wishful thinking : )

      @Marc Cram I don’t see any reason why that wouldn’t work. Almonds have a little less fat than walnuts. So if it looks too dry you can add a little more butter. I’m pretty sure you could get away with just nilla wafers too. Hope it works out for you!

      Ambrosia salads use sour cream, it thins out as it mingles with the juices and becomes a part of the orchestra rather than just a layer on the surface of your nice fruit...

      Maybe sweetened whipped cream? Ironically my son has been talking about grape pie and I didn’t think such a thing exists. But I would have to feed him with a cream based version first.

    I made this expensive recipe. The Organic grapes and walnuts cost $20.00. It was the worst thing I ever made; it was DISGUSTING and a waste of walnuts and fresh grapes!
