Having the chest of tools is a great idea. If something breaks, you can be prepared to fix things within reason. If you aren't prepared, you'll be stranded. Wouldn't the location of the propane tanks be better closer to the driver's side rear cabinet? You wouldn't have to run the lines too far.
I have the same refrigerator in my vintage camper, I run it off solar when no plug in, I think it pulls 3 amps after start up which is great. For heat and hot water why not look into a Diesel Heater with the attachment that heats your water and you can just tap right into your Diesel tank. I have restored 8 vintage campers so far and like you said these new campers are junk. Once I seen how these vintage campers was built I will never buy anything after 1970. If you need any info on parts or stuff let me know and I will help as I can.
Can't wait to see it when it's all finished. Tip for you it may be easier to put in a separate water supply for your sink than to run a pipe across to it.
Your drains should be on the left side for when you pull up to a dump station. There's no rule that say they can't be on the right side, just being on the left side is for ease of access so you don't have to run a house around to the dump station. 🙂
Run the water pipe under the floor just insulate it or even put a heat strip on it and also put a drain valve on it to drain the system when not in use, Also you only need the one pipe going across and T off to the hot water heater, The outside door on the bathroom just needs a latch to lock it and open it from the inside.

Bob as a former EMT make sure all your gaskets checked or replaced. Ambulance's tend to leak, At the very least get a co2 detector if your going to be running it a lot.
Just a tip Bob, you might want to come up with a way to keep the fridge doors closed. They will likely swing open on a rough road or turn when the stuff inside shifts.
Excellent ideas to preserve the ambulance integrity, yet make it useable as a motel room. The fresh water fill is usually secured so any whackos can't F with your water supply. Just saying. Jayman...
I’m considering doing this but with the crew cab (4- door) so I can take friends on trips or have extra, extra storage in the back of the cab (since typically it comes with only a 3rd seat or a bench seat)
My 18 wheeler had a shore power plug and it had 4 outlets. I had a 2000 watt inverter that I ran a plug to the shore power plug and it provided power to all the outlets.
That back door area would be awesome with one of those roll out awnings mounted between the rear bar light and top of your double doors just to give you a nice place to sit outside sometimes. But this is gonna be a great series @Bob. I think this is most “man dream” builds you’re doing. I know I’ve thought several different times of doing this exact type build back when I was doing all the bike rallies.. got me excited!! Lol 😂 can’t wait for the next video. Stay blessed brother!!
Dude, fwiw, I bought a pump similar to that 'rinky dink' pump as a booster pump for my shower. I was half expecting it to be crap, turns out it's amazing.
Check out everlanders videos. You can use Pepsi kegs for water with a compressor. No pumps required. Other plumbing I would use 3/8th tubing vs 1/2 pex
This is very cool. You may have stumbled onto a whole new industry. I’m sure there would be a strong demand for heavy duty stealth RVs like this, and I’m kind of surprised it hasn’t been done in the mass market yet. You’re right, regular RVs are cheaply made & have crappy towing capacity
I, would definitely do a gas range stove. If you’re ever stranded somewhere cold for a number of hours it will come in handy. You can heat the thing while you sleep also, instead of leaving something run you can't shut off,I without getting out to shut off. If someone hears that running, they might brake the drive side window and dive off with you. Not a ambulance ride me personally would want to go on pew pew, or no pew pew. 😆

We've been full time RVing and traveling for 5 years. My advice is to buy an older RV if you do, they ae made much better
