I followed this recipe and it was so delicious, I felt a little guilty for eating it myself throughout the week for my meal prep lunches. The flavor combinations of squash and spinach plus the cheese are just killer. I thought at first there were too many chillies in the tomato sauce but when it was spread throughout the dish it was perfect.
Literally had ritolo for the first time yesterday in a restaurant because they didnt have cannelloni, and it was stunning. Perfect to know theres a recipe right here for me to try once i have an oven haha

You can eat everything from the pumpkin: in addition to the pulp, the peel, seeds, leaves, flowers and buds are edible.
I saw the rotolo you cooked in Masterchef Australia, last night. That story you shared really touched me and I just had to look up a recipe because it looked delicious.
It's always less expensive and much more healthy to focus on plant based foods.I am vegan so I would sub a good quality plant based, creamy(cashew is best) cheese.The key to tasty veggie foods is the prep and flavorings added! This is a good one.

Dear Jamie, I really love the way you cook, but here it seems you forgot we are in July, not in Winter 😉 There is no squash in July in our country, and when it's 30°C outside, I personnaly can't use my oven (nor 3 burners in my kitchen...)
Grocery list prep/Squash and spinach rotollo ingredients:
1. Butternut squash layer: butternut squash
2. Spinach layer: Red onions, spinach, nutmeg
3. Tomato sauce: garlic, chillies, olive oil, passata tomato puree
4. Assembly: fresh lasagna, top with feta (or ricotta), cook in creuset pan, fresh sage

This is my fav way to eat butternut squash. Baked, salt, eat most of it standing at the stove “waiting” for it to cool. Skin and all. Best!
