    I have an Ankarsrum mixer that handles enough dough for 3-4 loaves at a time. I mix up two separate batches of dough when baking and that provides enough dough for 6-8 loaves. I usually choose to use that dough to bake 3-4 loaves of bread, a pan of buns, and a pan of cinnamon rolls or use that night for a pizza crust. I slice loaves before putting in the freezer. I freeze the buns and take them out as needed for hamburgers, sandwiches, garlic bread etc…

    I love sour dough too. One thing I've been doing to speed things up is add about 1/4 tsp instant yeast per loaf of sour dough. This really speeds things up and basically get similar results in the end.

    When I make granola bars, I use coconut oil, peanut butter, and honey. I do use quite a bit more Honey than I see you using here, but the coconut oil will help. I also will put them in the refrigerator after they cool down makes them much much easier to cut without them falling apart.

    I love lily nichols recipe for “granola” bars-
    It’s walnuts, almonds, collagen powder , flax or chia ( ground up in to flour ) ,coconut shreds, honey , salt
    I think that’s it … it holds together really well :)

    This is a nice video! I resonate with a lot.
    I make my bread with only (wholewheat+white spelt) flour, water, yeast, salt. I only use 500-600 grams of flour and get a larger bread.

    You can make more loaves by removing dough from the mixer as soon as it finishes kneading and letting dough rise in a separate bowl. When you are measuring your ingredients, put a twin batch of ingredients into a separate bowl. When the first loaf has finished mixing, remove dough to rise in separate bowl, and immediately mix the second loaf ingredients. They will rise fairly close together and you can bake both together at the same time, and you can heat your oven for two instead of just one loaf. I have a bread machine and use it almost exclusively to mix and knead the dough, take it out to rise in a separate bowl, and immediately mix another batch. If the house is really warm, I may have to punch down the first loaf one extra time so that the loaves will bake at the same time. Or put the first loaf in a cool place till the second loaf is finished kneading. That is how I do it.

    I am so happy that you are milling your own grains and going that route. I am excited for future videos from you. I have not mastered sourdough, so I love videos like this. I have been milling wheat berries for a year and a half. I have seen people with the big Bosch mixer making multiple loaves. What works for me is using my Zojurshi Bread Machine to do all of the heavy lifting for me. I make the dough in it and then divide and bake in my oven. My recipe gives me two loaves. Or, I take half of the dough for a loaf of bread and turn the other half into a pan of hamburger buns, dinner rolls, half hamburger and half hotdog, or a loaf of cinnamon bread for breakfast. I use Sue Becker's recipe (I know you must know who she is...amazing! Look her up if not)

    1 1/2 c. warm water
    1/3 c olive oil
    1/3 c honey
    2 t Redmonds real salt
    1 egg
    1 t vital wheat gluten
    1 T Lecithin
    4 1/2 c Freshly Milled Wheat - (I use 1.5 c hard red wheat berries and 2 c hard white wheat berries and have extra to freeze or I go slightly less of each If I don't 'want extra)

    We bake all of our bread at home and last year I got a Bosch mixer for batch baking our breads. It can handle much more dough than the Kitchanaid (I still have an use) and cost me 50€ off of eBay. Highly recommend that for your wholegrain breads.

    I used to work at a bread store. Have you ever heard of the Ankersrum mixer? You can make multiple loaves with fresh milled flour. It is an investment, but it lasts a lifetime. You will love this mixer if you make your own bread. You should look up some videos but I think you would love it in your kitchen. It is made in Sweden but the Bread Beckers was the US distributor. I believer they have now their own distribution. I know the lady who runs it and she is so knowledgable if you have any questions. Her name is Ashley. Thought you could good a lot of good use out of it. Love your videos.

    Best recipe ive found for granola bar contains banana pb and oats as a base and add whatever wlladd ins. Holds together well. I had same problem w mine falling apart.

    My older KitchenAid mixer died. We could have repaired it, but knew it would likely keep happening due to work load. Invested in Ankersaraum, because price was similar once we bought all the extra attachments needed. At least Anker had less plastics. But found it was scraping stainless bowl when using bread paddles ( now I just use the hook) Bosch looks really nice too, with stainless bowl. It would have been better if I could have tried them out first, then made a decision. No one I know owns either!

    If you have a cooking day you could make several single batches of the bread dough you like and then freeze them in a loaf shape- makes it easy to pull out and let rise whenever and fresh bread is always yummier anyways than frozen previously baked loaves or ones that are a few days old.

    Ive broken my kitchenaid mixer twice now with single batch doughs (if id have known how weak they are I never wouldve bought one), thankfully theyve repaired it with no cost to me.

    Stretch and folds have changed my whole bread baking life! I do not even bother getting my mixer out for bread anymore. It’s just easier to do the stretch and folds and I save my mixer for things like meringues and whipped cream! The stretch and fold method is supposed to be better for whole grains anyway because it builds gluten more gently than kneading.

    I had to switch to a Bosc mixer to make multiple loaves of whole grained, freshly milled grain. My Kitchenaid just didn’t have enough power

    I have been making sandwich bread also. I make two loaves at a time,(I am no milling my own flour 😊). I find though, that we don’t always get through it all before it starts to go bad. Some weeks we gobble it all up, and some we don’t. I need to find a better storage solution for it.

    You need a Bosch. Makes 6 loaves at once. Or a zojirushi bread maker. Takes 4 minutes to load and press one button and 2 hours later you have a loaf. I mill Kamut ancient grain.

      12oz water
      2 tsp salt
      1/2 c olive oil
      1/4 c honey
      1 egg
      1/2 c oats
      1c AP flour
      2cups kamut berries milled. Measure the berries not the finished milled amount.
      1 T yeast
      I use my Zojirushi bread maker's homemade setting. Let me know if you need the custom settings. Total time is 2 hrs 11 minutes

    How old is your school girl? Have you considered home school? Im an American in London, daughter just started mandatory education at 4 and a half and she has to go daily from 9 to 3 feels so many hours

    Zojirushi bread maker is the best. I found mine at a yard sale practically new for 12 dollars and I’ve been on the hunt for a second ever since. It’s the only bread maker I truly love and use. I just have four kids and want to be able to selfishly make two loaves at the same time 😅
