One of the ingredients that the regular (non-vegan) Alfredo has is fresh sage infused in the sauce. I guess you could take the sauce you made and simmer it with a few of the fresh sage leaves there to create the infusion. I do like the cauliflower addition however.

'nchia oooh proprio non vi entra nder cervello a voi americani come si fa sta pasta 😂. In ogni caso vi si perdona tutto. Perché siete vegani e perché siete simpatici ❤️
It takes less than half an hour to get nicely roasted cauliflower florets in the oven, don't even want to imagine how much longer it takes if you needlessly soak it in water first (have to fish them out) and then have to wait for it all to evaporate for the browning to start. Plus, what's the point of cooking pasta first and rinsing it, if you're not even adding pasta water to the sauce. Sometimes people cook pasta first if they need the starchy water to emulsify the sauce, but if you're not doing that, it's always better to finish cooking pasta inside the sauce so it absorbs more flavor, that's like pasta dishes 101 dude.

Cauli leaves are great in cauliflower cheese too or just roughly chopped with cauli served as a veg.

Yes, they make super tasty sauces and cheeses. Also can use hemp hearts. Super rich and creamy.
