    One of the ingredients that the regular (non-vegan) Alfredo has is fresh sage infused in the sauce. I guess you could take the sauce you made and simmer it with a few of the fresh sage leaves there to create the infusion. I do like the cauliflower addition however.

      Cauli leaves are great in cauliflower cheese too or just roughly chopped with cauli served as a veg.

    Are sunflower seeds a decent alternative to cashews? Or anything else? I have a nut allergy!

      Yes, they make super tasty sauces and cheeses. Also can use hemp hearts. Super rich and creamy.

    Non so cosa siano ste fettuccine alfredo ma so che son famose in america. Per quale motivo cuoci la pasta col cavolfiore e poi la passi sotto l'acqua!? Cioè insaporisci col cavolfiore, metti il sale, ti pigli tutto sto fastidio e poi la sciacqui!? É come vestirsi, sistemare vestito, cravatta, indossare la giacca ed entrare in doccia. Cazzé. Che é. Cci é. Marooon. E per quale motivo passi il cavolfiore in forno e ce lo metti sopra abbrustolito!? Il senso qual é!? Ed infine per quale motivo tosti il pane e lo accosti alla pasta come per accompagnare!? Che é, un contorno!? Sta pasta andava cotta, saltata in padella col condimento e servita. Tre minuti. Ovvía. 'nchia oooh proprio non vi entra nder cervello a voi americani come si fa sta pasta 😂. In ogni caso vi si perdona tutto. Perché siete vegani e perché siete simpatici ❤️

    It takes less than half an hour to get nicely roasted cauliflower florets in the oven, don't even want to imagine how much longer it takes if you needlessly soak it in water first (have to fish them out) and then have to wait for it all to evaporate for the browning to start. Plus, what's the point of cooking pasta first and rinsing it, if you're not even adding pasta water to the sauce. Sometimes people cook pasta first if they need the starchy water to emulsify the sauce, but if you're not doing that, it's always better to finish cooking pasta inside the sauce so it absorbs more flavor, that's like pasta dishes 101 dude.
