After being in Vietnam for 1.5 months, I figured that it must be a cultural thing regarding the fish sauce: It is so damn hot that you can't re-hydrate without salt, and fish sauce has very high salt content.

@6:50 - right there, that's the essence of eating in VN. A food cart will have food that are made from freshly caught/harvested/slaughtered the day before. The garden fresh picked vegetables, the tree ripened fruits, that have fragrants. I can't smell a friggin thing in my Western supermarket.
Love it when people come and visit my home country and enjoy its culture. It's certainly one of the more obscure food cultures in Asia that definitely is worth discovering, especially the coastal cities. Fresh seafood all the time, put it on a grill with some beer and some mates around you and you'll have the best time of your life.

I've always loved this show and his other show Uncharted. I also love that Gordon knows he's out of his comfort zone. I have seen him make it clear many times that he has no idea what to do while attempting to do something that is basic knowledge for those born in the country. I don't know where else to comment on this. I started baking 2 or 3 days ago with a simple recipe I came up with that day and the result according to me was phenomenal. I want to talk about today's baking sort of inspired by whole or a part of a recipe of an amateur cook who competed against Gordon in one of his videos. Mainly because I want to know if there's a simpler recipe for this. I added sugar to a bowl. Since I eyeballed half the ingredients, I believe that the volume of sugar I added was about 2/3rds of the volume of flour. I eyeballed 200 grams of flour. I added in 2 eggs and 1 or just a little over 1 tsp of vanilla extract. Mixed everything together until I got a smooth batter and baked it on medium heat for 5 minutes. The result was delicious and I think that this is the simplest recipe for a cake. Is there a simpler one?

I live in Northern Thailand, and cannot get Vietnamese food. Back in the US, no problem. Now I can visit Vietnam easily but no food here in Thailand from Vietnam.

You're missing out if Phở was the main food focus of your travel to Vietnam. Try to get to know a local of where you're about to go, they'll hook you up with the best food. Vietnamese cuisine is so incredibly varied and abundant, and I wish nothing more than to have people from other countries try it out.
Let's come back to VietNam. Now, it's really different from before. Something that you filmed in the past looks like situations from many periods of time. But I can't disagree that those films are so wonderful.
