    Ingredients and preparation:
    6 pig ears
    1 onion
    carrot
    2 stalks of celery
    5 cloves of garlic
    pimento
    4 bay leaves
    1 teaspoon black peppercorns
    1 tablespoon salt (or to taste)
    1 tablespoon sugar
    ½ teaspoon coriander seeds
    100 ml soy sauce
    2.5 liters of drinking water
    Potato salad:
    700g potatoes
    100g bacon
    1 tablespoon vegetable oil
    1 red onion
    250 g mushrooms

    Salt
    2 cloves of garlic
    1 teaspoon whole grain mustard
    80 ml pickle brine
