Looks like a beef chuck relatively cheap beef. Do not use a rib eye for this recipe. You will be disappointed you no longer taste what you normally would with a ribeye. Use a cheap cut.

When I was in college I would buy the cheapest beef I could afford then marinate it in beer till tender. It really stretched my budget.

Using a good flour for it works well.
