Standard tuning is pretty cool mate, it just takes a while to learn how to use it and a bit of theory knowledge maybe. But one of the best things you can do to sound jazzy in standard (or any tuning) is just to string skip. That minor 11chord or whatever he uses at the beginning is a perfect example of string skipping to make chords. (Also I never thought of using a sharp 9 chord but damn I like it. 7#9. Tasty stuff)
Go to the bearded guitarist channel. He has brilliant stuff from begginers to advaced. You need to learn the commonly used neo soul chord shapes to begin with. Good luck.
