    Pappu Pulusu (Andhra-Style Lentil Stew)
    Ingredients:
    - 3/4 cup Toor dal (split pigeon peas)
    - Salt, to taste
    - 1/2 cup tamarind extract (adjust to taste)
    - 2 medium onions, chopped
    -1/4 tsp turmeric
    - Coriander leaves
    - 2-3 green chillies
    - 2 tomatoes
    - 1 tsp red chilli powder (optional)
    Tempering:
    - 1/2 tsp mustard seeds
    - 1/2 tsp cumin seeds
    - A pinch of asafoetida (inguva)
    - Curry leaves
    - 2-3 dry red chillies
    Procedure:
    1. Pressure cook the dal until soft and set it aside.
    2. Heat oil in a pan and do the tempering (mustard seeds, cumin seeds, asafoetida, curry leaves, and dry red chillies).
    3. Add chopped onions , salt and turmeric and fry until translucent.
    4. Add tomatoes and cook until they soften.
    5. Pour in the tamarind extract and let it come to a rolling boil.
    6. Add the cooked dal and simmer for a few minutes.
    7. Stir in coriander leaves and red chilli powder (if using) for a minute.
