I make sopressata successfuuly every year, but i tried your capicola recipe and it came out perfect. I have a beverage frig and use that with a small USB humidifier for the sopressata and capicola.
Interesting! Back in the late '80s outside the air base in Sicily I was at was a lunch time food cart "The Chicken Man". He served a grilled chicken panini that was unbelievable! I always thought it was a lemon flavor I was getting but, I think now it was vinegar?! I think I might give it a try, at the worst I ruin a chicken breast.
When you added the vinegar, I gasped! They looked SO good before the vinegar. I looked at the restaurant link you included and their menu said they use "wine" vinegar, not *white...? I'll have to try and see which one I prefer. Thank you

.. interesting....in the Netflix episode they used white vinegar but I think wine vinegar would be amazing as well👍👍
