Chicken Stew || Chicken Stew Kerala, Kottayam Style

Chicken stew with Appam is a popular breakfast in Kerala. This simple, aromatic, mouthwatering stew is very easy to make and never fails to win the hearts of your loved ones. The stew is made by slowly simmering chicken, potato & carrot cubes in a lightly spiced coconut milk base. You can have chicken stew with bread, Idiyappam (string hoppers), Paalappam (lace hoppers), etc.

Ingredients:
-Coconut oil - 2 tbsp
-Cinnamon sticks - 3 pieces
-Cardamom - 5
-Cloves - 5
-Chopped ginger - 1 tbsp
-Chopped garlic - 1 tbsp
-Green chili slices - 3
-1 large onion sliced
-Few curry leaves
-Salt - 1/2 tsp
-Chicken - 500g
-Garam masala - 1/4 + 1/4 tsp
-Pepper powder - 1/4 1/4 tsp
-1 diced potato
-1 diced carrot
-1 bay leaf
-Thin coconut milk - 2 cups
-Thick coconut milk - 3/4 cup
