When I was in the Navy I was stationed at Sigonella, near Catania. The ararcini were more cone shaped but the way you make them is the way that I remember them.

I was stationed there in 2000-2002. I hear it's changed a lot since then. I miss the arancini but also the panini trucks in Catania.

i was stationed there too. there was a little vendor that used to be on NAS 2 near to the gate adn they had the cone shaped Arancini. and the Restaurant Medusa across from the base had them at one point. loved that the navy gave people such great experiences with different cultures.

My Sicilian mamma never put celery or carrots in her arancini . She also put some egg into the rice to help the rice stick better but the rest is spot on. Looks delicious. Makes me hungry.🤗b

I'm from Australia and I was in Sicily this June. Many great places but my favourite is the the ancient Greek Theatre of Taormina. Such an historic site with amazing views over the Calabrian Coast, the Ionian Coast and Cone of Etna. The way the the natural scenery is integrated with the architecture makes it truly special. Didn't know that arancini is originally from Sicily. It is very popular in Oz.

My favorite place in Sicily is the Provence of Catania.
Cipollini Catanesi, and Aranchini are my favorite snacks.
Pair those with a cappuccino fredo on a hot summer morning and you got yourself a winning combo.

We have a holiday house in Castiglione di Sicilia .One year I helped the neighbour with the olive picking and we took the olives to the mill in Linguaglossa. We are often there on out way for some spectacular walks on the north slopes of Mt Etna sometimes getting up at 4am so that by the time we are up on the mount we can watch the sun rising over the Calabrian mountains ...weather permitting. We should be there now but because of the pandemic our flights were cancelled.

Great demonstration and they look so yummy. I use to buy these for my kids 14 years ago for $1.50 each as a snack after school at the deli . Then our neighborhood gentrified and the price went up to $3.50 each a few years after. So we haven't eaten one in a long time. I'll have to surprise my teen boys with these. Anyone freeze and reheat these? They would make excellent school lunches if so.

My favorite small town is Cefalu. It is a beautiful place, high up on a cliff so that as you approach from Palermo, you'll see the sea, sky, and the city perched above. It does has roadways down to the beach where the fisherman also keep their boats ashore. Definitely walk down to the beach to enjoy a different perspective. It is a spectacular view that you will never forget it's beauty!
I visited 37 years ago, I truly hope that it has not changed! That day, while walking down to the beach, I bought a wooden plaque for my mother. Which hangs in her kitchen still today. It says....
"Ci son piu fiori nel mi cuore per
mia madre che in tutti gli giardini."
    Which in English says,
"There are more flowers in my
heart for my mother than in all the gardens."
At the time my US Navy ship was stationed in Gaeta Italy which is another must see destination! That is where I first had Arrancini. Walking along the water front road there used to be a place called Bar Hermes. They had great ice cream and granitas. I often got a sausage sandwich there from the small tavola caldo. This occasion I bought Arrancini and walked down the street eating it from the paper it was served on. No mess and was a beautiful, delicious, portable food.
    I loved them!
I thank you for the recipe and of course, I liked and Subscribed!
    Mille grazie e ciao. 🤠

In real sicilian arancini we use only rice and saffron and sometimes a little bit of cheese like pecorino. Also we don't use eggs but a batter of water, flour and salt.
PS we don't use mozzarella because it has too much water, there are a lot of other cheese we use :)

    • @marsroma3668
      @marsroma3668 3 ปีที่แล้ว +4

These look like the napoletan arancini... you are right the sicilian arancini is from rice and saffron to give a very arromatic rice...and yes mozzarella should be replaced with another soft cheese like caccio cavallo that does not have a high water content... they look good though...i'm sure they're tasty!!

My Nana is from Palermo and my Nanu is from Caltanisetta. My mother married Southerner (Florida) and I joke I was raised on Grits and Lasagna! But I have made Arancini every year since I was in my 30's. This is when I finally forced my mother (who refused to share recipes - is this a Sicilian thing? I think my Nana did it too! lol) to show me how to do it. I am now 72 and have now taught my daughter and my grandchildren how to make Arancini, but I oversee the process, of course. I see a difference in your recipe from mine. My meat mixture, includes cooking onions in olive oil along with ground beef and I add Pecorino Romano and Parsley with the tomato paste. No peas, carrots or onions in it, but it looks good, I may try it! Third, I use Arborio rice too, but for many years my mother didn't tell me what kind to use so I used Long Grain White Rice. I changed to Arborio this year (better late than never) and once cooked I add butter and Pecorino Romano or Parmesan Reggiano to the rice and it makes it easier to create the rice balls. Lastly, I add my meat mixture to the ball and create the ball, I add no cheese. But I do make some rice balls with cheese only. Which my vegetarian granddaughter prefers and she picks the cheese. Also I add pecorino romano and parsley to the bread crumbs and it makes it look beautiful and tasty. I'm not saying this is an Italian version, it's my mother's version. I'm sure this is an Americanized version, but beloved by my family and they won't tolerate any changes (trust me I've tried). I now have a grandson in the Marines who is coming back home after being overseas and he has requested Arancini from his Nana. I will make him our version, but I would love to try your recipe someday soon. Everything you've made that I've made so far has turned out FANTASTIC! So I know this would be delicioso! Thank you so much! What a gift you are Vincenzo!! God Bless you!
