This isn’t the real ceviche recipe. There’s a sauce that goes all over the ceviche that isn’t shown in the video. Look at ceviche dishes pics or videos served at restaurants and you’ll see there’s actual liquid at the bottom of the plate in all of them, that’s the real secret, this video is just a crappy attempt from Vice to show “authentic” recipes when all we’re shown is an incomplete video. This is trash. Look up how to make that liquid sauce and THAT is where the world renown flavor of Peruvian ceviche comes from

I had ceviche in Lima many years ago, haven’t had it matched in the many years afterwards. It was a simple ceviche with fish, stone crab of some type and seaweed. Excellent taste and texture.

My dad always talks to me about el "Chino" Wong! Before Gaston Acurio began the popularity of the Peruvian gastronomy, my dad's friend called Marcos used to say that he had the best ceviche in Lima! He usually only used to serve people that he knew, which was why he only had 4 tables inside his house.
Peru had the second largest Chinese immigration in America, that's why Javier and I have the last name wong, but we are as peruvian as el pisco y el ceviche.
I have never had a bad ceviche in Peru... But they all use "aji" "ahi" (don't know what the pepper is called). And they all use a different lime than American limes. It's a pepper that actually tastes good and isn't just hot and bitter. The lime isn't as bitter but it's more sower than limes we get here. That's it. That's why Peruvian ceviche always tastes better. Better peppers and better limes.
To eat in Chez Wong restaurant is very expensive. He is good but you dont need to pay too much in Lima to get good quality Ceviches. There are plenty of good Ceviche restaurants in Lima where you dont need to pay so much

My dad always talks to me about el "Chino" Wong! Before Gaston Acurio began the popularity of the Peruvian gastronomy, my dad's friend called Marcos used to say that he had the best ceviche in Lima! He usually only used to serve people that he knew, which was why he only had 4 tables inside his house.

I have never had a bad ceviche in Peru... But they all use "aji" "ahi" (don't know what the pepper is called). And they all use a different lime than American limes. It's a pepper that actually tastes good and isn't just hot and bitter. The lime isn't as bitter but it's more sower than limes we get here. That's it. That's why Peruvian ceviche always tastes better. Better peppers and better limes.
It's called aji limo, very similar to habanero pepper in flavor, color and aroma.
To eat in Chez Wong restaurant is very expensive. He is good but you dont need to pay too much in Lima to get good quality Ceviches. There are plenty of good Ceviche restaurants in Lima where you dont need to pay so much
