    The care you take in preparing and shipping the small angle brackets is commendable, but wouldn't it be easier to make a pdf file available that anyone could reproduce on their own?
    My professional knife sharpener refuses to take on the knife you're sharpening today, and he gave me some as a gift: they are similar to yours but in a solid color. I find them thin and light, easy to sharpen, excellent in home kitchens as long as you take care to use cutting boards that are not very hard.
    Many thanks for the excellent explanation of the sharpening degrees: have you ever used a strop as the last step?
    From your point of view, what do you think of those European chefs who use steel to straighten nicked blades?

      You can make your own protractor by trimming a dough scraper with a sharp knife.

    You have to make an additional groove in the middle and attach a piece to it to make a leg 90 degrees perpendicular to the surface of the grinding wheel.

    평소에 봤던 내용말고도 좀더 자세한 설명과 이유 말씀주셔서 도움이 많이 되었고 몇몇 가지는 내가 느끼던게 맞았다는 생각이 들어 좋았습니다.
    혹 한가지 여쭤보고 싶은데 양손으로 연마를 하시는데 시도를 조금 하여봤는데 전 양손연마하면 왼손이 많이 흔들리게되더라고요.. 한손연마로 칼을 뒤집게되면 각도기사용도 달라질것같은데 양손을 연습하는게 가장 나을방법일까요? 아니면 한손으로도 충분히 숙련도올리면 좋아질까요?

    다이소 1000원짜리 칼도 연마 잘하면 카타나다.

    연마 하면 다 좋죠. 하지만 절삭 유지력에서 차이가 많이 나죠.
