    안녕하세요 나리님 저도 영상속 칼처럼 두께조절이 필요한 상태의 칼을 보유하고 있는 초보 요리사 입니다. 저는 칼을 연마하면서 가장 큰 고민이 야채를 빠른속도로 칼질할때 재료들이 사방팔방 튀어나가는것이랑 칼의 휘어짐에 있습니다. 어느 선배가 저에게 "니가 왼손으로 칼을 쓰는데 오른손잡이용 으로 설계가 된 칼을 사용해서 그렇다, 왼손잡이전용 칼을 따로 구매하는것이 맞는것 같다." 라고 얘기하더군요. 양날검인 쉐프나이프에도 이런디테일의 차이가 있을까요? 원래 이런 내용의 말들은 예약을 통해서 하는것이 맞는데 네이버 블로그에 가보니 예약이 다 차있다고 하셔서... 여기에라도 댓글 남깁니다. 결론을 예약을 하고싶구요, 제가 궁금한 내용을 직접적으로 한번 여쭙고 싶습니다 ㅠ 칼질하면서 너무 답답합니다 바쁘시겠지만 답변 부탁드립니다 ㅠㅠㅠ

      The process of welding creates a molten puddle of material that then cools and solidifies. This means that all welds are castings, of a sort. On top of that, with so many steel alloys out there and not having a lab to give you the exact compositions you're working with, it is nearly impossible to match the filler material to the base material. This means that they will heat and cool, expand and contract, slightly differently. As well, welding is a process that involves a lot of heat. That means the blade would need to be made bare (handle and fittings removed) and then run through normalization and heat treating cycles all over again. The risk of a catastrophic crack forming in the blade is high, and the blade would most likely break if you worked it enough to weld and then forge in new material. You would actually be better off scrapping the blade entirely and reforging it anew.
      That's not to say it is impossible, it's just the metalworking equivalent of performing brain surgery while on a rollercoaster. The patient might live, but they certainly won't be much more than that.
