My mom made an apple cake in a fluted pan and didn’t add rum but added cinnamon tossed on the sliced apples and maybe sugar too. It was a delicious cake and she made it often. I loved it. Just basic and good. It was moist with a crackly top/edge. 😊
Made recipe and divided into two loaf tins lined for easy slicing and these cakes were the most popular and delicious and chunky apples are the way to go thx Beth

Hi Beth, I couldn't wait to make the cake, but had to use things I had on hand. We don't drink and did not have rum extract. Instead I used 1 tsp of almond extract instead... boy it was a hit with my family! My husband said it reminded him of an Italian bakery in NYC. I love it when you humm and with that devilish look in your eyes tells me how delicious this cake is😋. As the weather cools it is the PERFECT fall cake even here in Florida. No fall leaves and the only colors are the different license plates announcing that winter is coming along with the snowbirds. The morning after Thanksgiving this cake would be perfect I think. I've been making variations of this cake for several years. I really like using the rum in the recipe, and have adapted a slightly different approach to adding it. I place my cut up apples in a plastic bag and add 1/4 cup rum then allow them to soak until the rum is pretty well absorbed. This may not be the traditional method, but it comes out great with a more cincentrated flavor in the apples themselves.
And another perfectly timed recipe! It's apple picking season here in central NY state and have plans to go picking this coming week! This cake will definitely be made soon, it looks delicious!!
I made this today. The flavours are wonderful and the texture is great. I could of baked it a bit longer. I find it’s hard with so much fruit in cakes to know when it’s done. I will certainly make it again. Thank you Beth. I also love watching your European adventures. I was in Florence, France and Germany this summer. I love Europe. Envy you get to live there.

I'm guessing you were talking to the American audience and didn't say the BEST salted butter in the world is Normandy's!! Paysan Breton (so Brittany/Normandy) salted butter! found right in your local french grocery store :-) Also, for American's Ireland's butter/salted is the very best for America!
