This looks so comforting especially as the weather starts cooling down! Quick request Beth - would you be able to do some new recipe ideas for packed lunches that travel well? I've been bringing my own lunch to work and I don't always have access to a microwave, so it'd be amazing to have a few extra recipes in the repertoire that can be enjoyed hot or cold and where necessary on the go! Bonus if it can be made ahead in batches and stored in the freezer that would make life so much easier
I never used to like raisins, but now I eat them in oatmeal (for extra fiber) and I used to like carrot raisin salad, but haven't made that in a long while, and I love raisin bread, but only toasted with butter and a light sprinkle of cinnamon & sugar. 😋😋😋😋😋😋😋😋😋😋

I really wanted a new recipe to incorporate apples for the fall and this looks perfect. Thanks for sharing! I would also love to see more recipe ideas for my air fryer. I am really trying to limit the use of my fryer and want to make more air fryer recipes that will appeal to my husband and four hungry teenagers. Not necessarily more healthy but definitely with less oil in the air fryer. I homeschool so having a few good recipes that my teens can make on their own in the air fryer would be great, especially since they are always hungry.

Sure you could do that, but just use the parchment non-stick liners since the cake is soo delicate you don't want all the crumbs sticking to the papers :). Have fun at the event!
Maybe you could make in the mini bundt pans and sprinkle the cinnamon sugar topping in the bottoms? It wouldn't come out crackly, but I don't know if it would just bake into the cakes, make a syrupy topping when you flip them out, or if it would burn on the bottoms 😬. You'd definitely need to a test run first, experimenting with different ways of using the cinnamon-sugar.

It was strange - not the bigger supermarket A&P from my teens and 20s, but more like the small grocery store from childhood before supermarkets completely took over. Anyway, it shortly closed and I think that's when the company finally went completely out of business. I'm surprised you never had raisin pie - I'm certain you'd like it! It's funny to me that my grandmother (my father's mother which is where I'm guessing my father got his love of raisin pie) also made mashed potato filling or dressing with the turkey at Thanksgiving. Both are Pennsylvania Dutch and she was 100% Irish! She grew up with servants (la-de-da! 😂) so maybe they had a German cook? 🤷🏼♀️ Anyway, long story, but I don't have any of my old recipes here with me. I took a look on Google and the one that seems to be what I remember is this one. It definitely had both white and brown sugars, had lemon juice as the acid and included allspice. I like the idea of using raisins, could you swap dried cranberries for the raisins? That flavor marries well with apples and oranges and is a seasonal ingredient for fall. Also how would walnuts do if you could not use pecans (in-law has allergic reaction to certain nuts)?
Oh sure you could do dried or I would actually use fresh cranberries (1 cup) then lower the apples to 1 cup and sure chop the walnuts finely and use them instead of the pecans. It would be great! :) Hope you enjoy!!

Looks delicious. I wonder how this would taste using oatmeal flour. I’ve been using it more lately. Kristin Cavallari’s cookbooks have a lot of oatmeal flour recipes and I’ve enjoyed them.
I’m so glad you enjoyed it! Super yummy isn’t it? I am using a microplane zester but weirdly, I feel like they stopped taking it because I have never been able to find that again. But sometimes you can find ones that are similar that are marketed as cheese and chocolate graters. They have the widest grate.👌
I love golden raisins. It’s such a shame that dried fruit has been replaced by choc chips in most recipes. There is a loss of nutrients and texture and choc chips can be pretty boring and lack the zing that fruit provides.
Agreed! I actually dislike chocolate chips in most things! Nothing more disappointing than hearing somebody say, "I've brought banana bread!" and then seeing they've added chocolate chips... 😕
Well, I have gone down that road on a cupcake testing mission once thinking that it would really make the difference, and...meh? Couldn't really tell! Ha! I think sifting the flour makes a bigger difference. But you could put it to the test! No but I bet that would be delicious too! Soak them in a little orange juice first to plump them up, then drain before stirring them in.

Looks delicious. I wonder how this would taste using oatmeal flour. I’ve been using it more lately. Kristin Cavallari’s cookbooks have a lot of oatmeal flour recipes and I’ve enjoyed them.

Oh at least an hour but it may be a bit fragile for that type of pan unless you add 2-3 tbsp more flour for a bit more structure 👌

I’m so glad you enjoyed it! Super yummy isn’t it? I am using a microplane zester but weirdly, I feel like they stopped taking it because I have never been able to find that again. But sometimes you can find ones that are similar that are marketed as cheese and chocolate graters. They have the widest grate.👌

I love golden raisins. It’s such a shame that dried fruit has been replaced by choc chips in most recipes. There is a loss of nutrients and texture and choc chips can be pretty boring and lack the zing that fruit provides.
Agreed! I actually dislike chocolate chips in most things! Nothing more disappointing than hearing somebody say, "I've brought banana bread!" and then seeing they've added chocolate chips... 😕

Well, I have gone down that road on a cupcake testing mission once thinking that it would really make the difference, and...meh? Couldn't really tell! Ha! I think sifting the flour makes a bigger difference. But you could put it to the test!
