The 'Deadliest' Catch & Cook: PUFFERFISH!!! (FUGU)

    Kind of an unexpected catch and cook on my end. Didn't expect to encounter this fish on my little trips but I have heard nothing but good things about them. I also briefly discuss the poisonous side of these fish...basically one strain has them but it still is a cultural phenomenon.
    I basically jigged 1/8 oz jigheads with assorted Gulps (shrimp & nemesis) for a standard back bay assortment of fish like snook, jacks and the puffer. The weather was going to get ugly so I made the most of this trip in a limited amount of time.

    Also for anyone wondering these are Northern Puffers also known as "Sugar Toads" due to their delicious meat. Unlike other species of Puffer their meat does not contain poison.

    Years ago on Long Island my family would go to Robert moses state park and people would use crab traps with Squid to catch them 3 of 4 at a time - they would take home buckets full in a hour . I can't remember the last time I caught one.

    I caught a half dozen nice big winter flounder fishing off a small jetty behind Ryanoids Channel during the early 1980's and hooked four nice big blowfish, I took the fish home and my late dad sautéed the flounder felts with the skinned blowfish in some olive oil and put the fish in a marinara sauce and those blowfish where just like big beautiful drumsticks with the flounder over a plate of spaghetti and those blowfish were so good you could eat the bone ! To anyone who hasn't tried sea squab and if you ever have the fortune of catching some blowfish don't hesitate to bring them home and cook em up, you just don't know what you're missing - they're so good they are to die for !!!!!

      Thanks guys, I don’t clickbait hard or treat my audience like idiots. People get in this game to make money off TH-cam. And coincidently Fishing was the platform they chose. I started as someone that lives off Fishing and added TH-cam as one of my platforms. It’s a little different.

    Guess I'm really old - I didn't read all but No one here I saw said the NJ bays were filled with them in the 60s. There should be a limit on them. Back then people took home hundreds at a time. I remember when I was 10/12 my family brought home like 250. Something to be concerned about is the turtle type jaw. Yeah, if they clamp down you can have real trouble. BUT - IN THE 60s IT WAS REPORTED THAT PEOPLE GOT VERY SICK WHEN BIT DUE TO SOMETHING ON THOSE JAWS.

    One of my top fish to eat. Super easy to clean and they freeze very well. No rib bones to deal with either. We hit the OBX in the early spring and load up on em when there spawning.

    At 2:50 we called those sand perch or silver perch. They seem to have different names depending on where you are.

    Wife used to buy by the bag full,maybe 5 lbs. cost about 5 bucks. Then they disappeared. Delicious. We used to catch them plenty at Highlands out in the bay. I've heard they are coming back.

    For absolutely perfectly cooked fish try sous-viding. It's like poaching but brought to perfection with no timing issues which both poaching and frying share. To my mind fish is more sensitive to cooking than steak. And like steak, it ends up a compromise of the outer part over-cooked and the inner nearer perfection, but that's only if you get the timing right. I converted my anti-fish sister with poaching (but also with a sauce, as below). With sous-vide not a bit of it is overcooked and timing makes no difference; it's completely evenly cooked. Once poached/soud-vided, I may also make a Crème fraîche sauce (french-style soured cream) with 40% fat, maybe some lemon, with the results of frying a chopped up scallop. With a steak or frying fish (without the batter/flour) I may just dump the Crème fraîche on top of the fish/meat and reduce for 30 seconds to make the sauce. Over-reduced results in an oil-slick or too thick sauce. Crème fraîche at 30% fat goes a bit sludgy. Not good for frying but fine for making dips. In france the 40% stuff (which is anywhere between 35%-42%) is premium and called Crème fraîche D'isigny. Currently Dairy issues mean a shortage of Crème fraîche and butter, sadly. I can't find it in the UK currently. No one is selling it.

      I've been eating them forever. I just peel the skin off and take the back muscle. Taste like frog legs. I have heard that the poison is in the liver, and I don't eat fish guts

      Only certain parts of the pufferfish served as fugu contain tetrodotoxin.
      The liver, gonads, the eyes are the most lethal parts, and puncturing or damaging these organs during the preparation is where the danger lies.
      Cleaning puffers is not all that difficult, though accidents do seem to still happen.
      My understanding is, daring chefs will allow for the slightest bit of toxin to touch some of the fish, so the diner feels numbmess on the lips and tongue.
      Perhaps a little too much, and...

    Man I'm so jealous. Been requesting this one for awhile. They're easy to catch, easy to clean, and easy to cook. By far my favorite fish to eat. I could eat these every day. They only have the spine down the middle, so you have huge lumps of boneless meat on each side. I'm drooling watching you eat that lol.

    They are pretty cute, he tried his best to look fierce so you would drop him. I sort of felt bad for him, lol but then I saw how easy he was to clean and how content you were when you are eating him. I use to play with them on the sea wall in New Orleans as a child.

      YES of course....omg he does NOT have to eat puffer fish to survive. This guy does not live in a 3rd world country does he ??? there are SO many other options available for this person to eat to survive (vegan/vegetarian/and meat if you incist which I know you will...) he can easily buy stuff at a supermarket or bio food, or grow his own stuff to survive. So yes this kind of eating behavior is purly for enjoyment and I do judge that kind of reckless and indulgent behavior concerning food when others don't have any and it is on top destroying eco systems (fishing does) and endangers species. You very well know he is just killing and eating this animal because it is his hobby, NOT to survive. So yes I also do judge people fishing ONLY as their hobby, for their own enjoyment.     Puffer fish is very good to eat. Used to catch them in Maryland with cat food. Right off the Motel .The Roe from these fish are excellent mixed with scrambled eggs. Caught them for years.

    I haven't had puffer in years, but as I remember it was very tasty. One waning 0 for the poisonous varieties, the toxin is *not* neutralized by cooking.

    Not poisonous! Very tasty. I never throw back the larger ones that we catch in North Carolina. To make them easier to clean look up a utensil called the Toad Tool.

    NJ in the 70's we caught puffer fish by the garbage can full in Barnagut bay. How we cleaned them: Use a nail threw a board, impale it through the head, cut around the head and peel the skin off like a banana. Then gut it. Bread and fry like a drum stick. It even tasted like fried chicken.

    The thing about puffers... DON'T GET YOUR BODY NEAR THEIR MOUTHS! Seriously they will cut nice little round chunks clean out of you in a heartbeat.
    You want to try something good, bash up some chips to a nice breadcrumb type consistency and use them to bread your fish before you fry them...

    As long as you don't eat the skin, the roe, or the entrails, you'll be fine. I ate a ton of it as a kid in NY. There were so many in the Great South Bay that we were catching them in crab traps. Alas, no more are they that plentiful.

    It wasn't the Simpsons in the 90's that made people think all Puffers are deadly. It was the Japanese dying from eating puffer fish in Japan and it's been that way for decades before teh Simpsons.

    You never had it up north? It was one of the first fish I cooked myself. Used to fish for them on the Rockaway side of Jamaica Bay

    As a north easterner who finds himself displaced in Florida for college I'm gonna have to find a way to catch some of these for myself :^)
    I'm still stuck on catching & cooking bluefish out of Ponce inlet (guess you can't take the Connecticut out of me)
