Just a heads up about Hidden Valley Ranch Seasoning...... the first ingredient is Maltodextrin, The glycemic index (GI) in maltodextrin is higher than in table sugar. This means that the powder can cause a spike in your blood sugar shortly after eating foods that have it.
I had to give up so many low calorie and sugar free items that caused glucose spikes. My continuous glucose monitor had me so confused but research taught me that maltodextrin is used as a filler as well as a ‘natural flavor enhancer’. It’s in many ‘keto’ processed foods.

I used this recipe to make the crunchwrap shell. I took the excess dough to make rounds that I kept in the freezer between the parchment paper. It's really nice to just grab a shell from the freezer and fry it in less than 5 minutes for a quick tostado. Today, I used one to make a mini personal pizza with maranara sauce, mozzerella, and pepperoni. it tasted almost like the crust of the frozen Totino's Pizza.
I baked a second batch at 375 F for 14 minutes and it was perfect. I divided the batch in 6 balls and flattened them with the tortilla press. I brushed them with olive oil and seasoned them with adobo before putting them in the oven. Would definitely make again! Very easy

I must tell you my favorite recipe to make with doritos. Your dorito recipe will be perfect for my recipe! BBQ Nachos Ground beef (However much your family needs) Sugar free BBQ sauce Shredded cheese Toppings of choice Brown meat and then add sauce. Top onto dorito chips and add shredded cheese. Add toppings of choice Enjoy I usually add sour cream, black olives, and chopped onion. It is so good!
If your house isn't much over 85 degrees Fahrenheit the oil will probably be fine for a week or so. I'd cover it with a plate though so dust stays out. Also wouldn't let it go too long after that though.
I haven’t tried the oven but I know some people have used the air fryer. I would try baking at 400 or 425 degrees. Maybe check them after 5 minutes. Store then in a brown paper bag or ziplock bag for 5-7 days.

I just made these. I used an egg and only 1 tsp. Xanthan. Well, the egg was large, which made the dough too moist so I had to keep adding almond flour and protein powder. Then, I used a tortilla press to flatten them, but they were too thick. Ended up more like a cracker. They didn't stay crunchy, I'm guessing due to the egg or extra everything I had to add, so theyre in the dehydrator now. What is the least amount of xanthan we can use and still have them work? I don't want to use egg next time. Thanks!

Most likely, you didn't get them thin enough. Hers are almost paper thin.
