I'm making this sauce this weekend. IT LOOKS OUTRAGEOUSLY GOOD! Thank you for this! I actually would use slow roasted garlic as I find raw garlic a tad too shocking to my gullet! (meaning I get heartburn) but this recipe with the fish sauce and cilantro is too good not to try!!!

I'm the only one in my family who eats spicy too, when I make it, I just make enough for me. Freshly made is always best then ones sitting in the fridge turning! :-)

If so, mix dried chili powder/finely ground chili peppers, finely chopped/minced fresh galangal root and fresh garlic, add some fish sauce, roasted rice powder, msg, and beef bile. If the sauce is too thick or too salty add some warm water. Garnish with some fresh cilantro!

In my opinion there's really no substitute equivalent for fish sauce but for those who absolutely dislike fish sauce, I'd suggest using sugar water ( lightly brown 3 Tbsp. sugar, add about 1/3 cup water to it) add salt and the rest of the listed ingredients.
