Kale and Apple Salad! With a homemade dressing. Super food salad!

This Kale and Apple Salad is fresh and delicious! No matter the time of year, I'm always looking for new salad recipes. So it's nice to throw together some fresh ingredients that are not only delicious but good for you. The combination of kale, apple, pecans, dried cranberries, and cheese drizzled with a homemade vinaigrette is amazing!
Kale and Apple Salad
Ingredients
3 to 6 cups chopped kale
1 apple cut into chunks
1/2 cup chopped pecans
1/2 cup dried cranberries
1/2 cup feta, queso fresco, or shredded parmesan
1/4 tsp salt
Poppy seed vinaigrette
1/2 cup olive oil or avocado oil
1/2 honey
1 tbsp dijon mustard
1 tbsp poppy seed
1 lemon juiced
Instructions
Add salt to chopped kale and massage to work the salt into the leaves. Add the rest of the ingredients and drizzle with your favorite dressing. I use a homemade poppy seed vinaigrette.
To make the dressing
Add all the ingredients to a dressing shaker or a mason jar and shake until well combined.
