Somehow I actually was able to follow this and usually this much knowledge going into my brain at once wouldn’t stick and I would only retain 1% of it 😅

This might me a dumb question.
I have been learning by just watching the song on TH-cam and copy it/follow along. Could I just learn by doing that? I mean, I might not want to compose nor anything, but could all this theory be helpful if I just learn songs by watching the keys played and imitate that?

This is definitely one way to do it. I would recommend trying to identify what key the song is in just so that set of notes is more ingrained in to your head as a certain key. Once you know the scale it makes it much easier to play other songs In that key. But the short answer is no, that's not a dumb way to do it, although I would recommend learning the theory

Learning a new instrument to decent and safe (avoiding injuries) level require a correct technique which is usually best taught in formal lessons, at least at the beginning.

Crap. Too much information in too short a time for a beginner to take in.

Don't give up! It will make more sense the more you practice! It takes patience but it's worth it
