That's a great idea for the shoulders as I'm sick of boning out mine at home. Could you tell me how far up the very first chop is, from the front leg, as it were. Or should I say, how far up do you cut off the front leg and brisket so I won't make a mess. Chops look fab; great butcher👌👍👍
