    This is how I do it and never been to culinary school.. but maybe this is the point of the video ... to give general directions to inexperienced people who just want to debone a shoulder one day regardless of perfection..

    I sat the shoulder on a large cutting board right in front of my computer, that made it easy, got a great haul of lamb and will make the bones into lamb broth and or stock, the meat will be Rogan Josh, by the way I happened to go to the market today and shoulders were half price so I got two for the price of one, will be freezing the other meat for later Rogans, cheers from the Aussie Bush.

    I'm wondering why they didn't have Chef Elia or Chef Schneller do it...they're both certified butchers and teach the meat classes at CIA

    You claim to be professional
    This is not debonning
    And i am certain this is not how butchers work
    So what do you call this ?!
