Add black peppercorns, crushed red pepper, or both, sliced jalapenos, sliced serranos, or hot chillis to the jar for some extra kick...
Tip...
Add sweet things to make sweet. Spicy things to make spicy...Bitter to make bitter....

Venison shank has become my 2nd. favorite cut from the deer we kill. 1st. is sirloin tips. 3rd. is tenderloin & then backstrap. Shank meat is way under rated. That collagen is money !

Awesome video. A suggestion with the pickled onions that I like (not for everyone ) add a teaspoon and a half of whole Allspice , a teaspoon of whole Peppercorns, and a teaspoon of red pepper flakes. Great with eggs or a sandwich. It adds a kick to the onions.

Thors hammer is one of the few cuts ive never done but very much want to. Seems like its not the most versatile in ways to cook but the applications it can be used in seem almost endless.

Crazy it's harder than I thought to find me a toaster oven that advertises a stay on function with temperature adjustment that will fit a full brisket or your shanks! Thank you for your videos!

Pickled onions! My last cook (~60 people), I brought a gallon of pickled red onions to accompany the first night (Mexican tacos, beef and chicken) I had made a month earlier. Maybe 3 takers total but everything else gobbled down. The pickled onions are absolutely delicious, still eating them over a month later. I'm thinking I've deluded myself as a bbq'r/cook since frankly, I'm seeing the 'market' more partial to McDonalds over much better food. I'll get over it.
