Ingredients:
1 1/4 cup all purpose flour
1 tsp baking soda
1 tsp salt
3 tbsp sifted cocoa powder, unsweetened
1 stick (113g) softened butter, unsalted
1 cup sugar
1 egg
1 tsp vanilla
1 cup milk
1 tbsp vinegar
Red gel food color (as to desired red color)
Frosting:
1 block 250g cream cheese, softened
1/4 cup (or 1/2 stick) softened butter, unsalted
1 1/2 cups powdered sugar, sifted
1 tsp vanilla
Bake at 180C for 20 minutes or until they spring back when pressed or a skewer inserted at the center comes out clean.
Chill the cream cheese frosting before using on completely cooled cupcakes.
You can double the amount of powdered sugar if you want to make the frosting stiffer.
